Today's #smallbusiness is another of my favorite restaurants: Red Apron Butcher and B Side. They have a sit down restaurant at Mosaic with the most amazing fries and burger, along with other tasty treats (pic courtesy of Red Apron). They also have a butcher shop with steaks, half smokes, charcuterie, etc. They also have an awesome bar! Great place for dinner.
Coast’s R&E Racing returned to Virginia Motorsports Park last weekend with its award-winning ‘69 ProCharger Pro Mod Camaro and a fresh batch of dining delights!

For the PDRA Racing circuit’s latest stop, we updated our #FatMap with the latest gastronomic hotspots where fans can "#TasteTheDifference” that #lard and #beeftallow make in popular dishes.

Highlights include locales like Fairfax, where B Side serves aged beef-fat fries and Red Apron Butcher seasons theirs with garlic, salt and rosemary.

You’ll find lard in the refried beans at La Terraza Mexican Grill in Williamsburg and Abuelo's Mexican Restaurant.

At Olde Towne Butcher in Fredericksburg, pork fat and beef fat are on offer, as is virtually any cut of meat.

In North Chesterfield and other spots throughout the region, Popeyes Louisiana Kitchen fills its fryers with beef tallow.

In Richmond, Rowland and The Roosevelt offer their burgers with variations of bacon jam.

And for dessert, King's Barbecue in Petersburg makes its pie crusts with lard.

The B Side, our neighborhood joint situated next door to Red Apron at Mosaic, is an amalgamation of all the things we love the most: crazy good food, prepared simply; way too many wines; stiff drinks made by pros who know how to make them; a mind-boggling beer list; killer tunes on the turntable and a scene that has no patience for pretense.

To make it all happen, we assembled a braintrust including Chef & Butcher Nathan Anda, Resident Hop Head Greg Engert, and a team of merry mixmasters and grape gurus. Together, this band of brothers has built nothing less than a double live album of greatest hits. From infamous Beef Fat Fries to obscure wine finds, from cool and crafty cocktails to Nate's inimitable charcuterie, from bar snacks to burgers to butcher's cuts and beyond complete with a ridiculous list of beers, our guys are bringing it.

What's more, we don't cut corners. Full stop. If there's one thing these boys have in common, it's a total obsession with sourcing and serving only the absolute best.
