One of eXurbs Fitness top athletes recently competed in a National Motocross event in Florida over Thanksgiving week.

@_nicklaurie never ceased to amaze us with his talent, grit and willingness to give it all to compete at the highest level of racing.

Nick puts more time in the gym than most anything else. With an understanding of the benefits of exercise and health, he will continue to impress us all.

Green Bean Salad is a great and quick side dish. A very healthy choice no matter what diet you could be on.

INGREDIENTS
2 lb. green beans, trimmed
kosher salt
1/2 red onion, thinly sliced
1 tbsp. rice vinegar
2 tbsp. soy sauce
1 tsp. honey
1 tsp. Sriracha or other hot sauce
1 tbsp. peanut oil
1 pt. grape tomatoes, halved
1/2 c. cilantro, chopped
1/4 c. peanuts, chopped, plus more for garnish

DIRECTIONS
Bring a large pot of water to a boil. Add the green beans and 1 teaspoon salt and cook until just tender, 2 to 3 minutes. Immediately transfer to a bowl of ice water to cool. Drain.
Meanwhile, in a small bowl, combine the onion and vinegar. Let stand for 5 minutes, turning occasionally.
In a large bowl, whisk together the soy sauce, honey, Sriracha, and peanut oil. Add the green beans and toss to coat, then toss with the tomatoes, onion, cilantro, and peanuts

Keto Pumpkin Cheesecake, this is so tasty without all the sugar of a regular pumpkin pie. Hope you enjoy.

DIRECTIONS
Preheat oven to 350°. In a medium bowl, combine almond flour, coconut flour, Swerve, cinnamon, and salt. Add melted butter and mix until well combined. Press crust into an 8” springform pan in an even layer a little up the sides. Bake until lightly golden, 10 to 15 minutes.
Reduce oven to 325°. In a large bowl beat cream cheese and swerve together until light and fluffy. Add pumpkin purée and beat until no lumps remain. Add eggs, one at a time, and beat until well combined. Add vanilla, cinnamon, ginger, and salt. Pour batter on top of crust and smooth top with an offset spatula.
Wrap bottom of pan in aluminum foil and place in a large roasting pan. Pour in enough boiling water to come up halfway in the baking pan.
Bake until center of cheesecake only slightly jiggles, about 1 hour. Turn off heat, prop open oven door, and let cheesecake cool in oven, 1 hour.
Remove foil and refrigerate cheesecake until completely chilled, at least 5 hours and up to overnight.
Serve with a dollop of whipped cream and toasted pecans.

Roasted Sweet Potatoes With Maple And Bacon
INGREDIENTS
5–6 cups peeled sweet potatoes (about 2 large), cut into ½ -inch cubes
¾ cup thinly sliced red onion (about ½ medium)
2 tsp. avocado oil or olive oil
2 tsp. maple syrup
3 slices thick-cut bacon, uncooked, sliced, or chopped
Salt and black pepper to taste

INSTRUCTIONS
Preheat oven to 425ºF.
Place sweet potatoes and onion in a 9×13-inch baking dish or a large rimmed baking sheet lined with parchment paper.
Toss with oil and maple syrup.
Sprinkle uncooked bacon over the potatoes.

Bake for 20 minutes. Stir and bake an additional 10-15 minutes or until potatoes are tender and slightly caramelized.
Season with salt and pepper to taste before serving.
