We’re ramping it up this weekend! Ramps (aka wild leeks) are back! Nurse Vicki hiked out to her honey hole to harvest them for us again this year! *Sustainably harvested (only leaves, never bulbs)* We’re making fresh ramp pesto, spreading it on our croissant dough, rolling it up, and baking to stinky perfection. Available this weekend only!

If you missed out on preordering our famous Polish Sweet Bread, don't despair!
We'll have lots for walk-ins on Thursday and Friday! Though I would still get in early to make you snag a loaf (or three). Saturday, we'll keep the festive vibes going and have authentic Hot Cross Buns. Sunday, we'll be CLOSED, so get yer buns in on Thursday through Saturday.
The true stars might be our pastries this week though.
Our Miso-Glazed Carrot Puffs with Goat Cheese are back (if you remember these from our Horse Girl specials during the Kentucky Derby then YOU KNOW), as well as those beloved Butter Tart Puffs. Saturday we're going all out and glazing our classic croissants in honey and filling them with a spiced carrot & cardamom jam and saffron whipped cream. You don't need to be Bruno Mars to enjoy this 24 Carrot Magic--anybunny can sink their teeth into these.
Another important reminder: WE ARE CLOSED ON SUNDAY.

24 carrot magic in the air! We are open 8-2 Thursday-Saturday and closed on Sunday this week. 🥕
We’ve got savory miso-glazed carrot puff pastries with goat cheese and twice-baked croissants with Persian carrot jam and saffron orange whipped cream rooted in flavor!

Polish sweet bread and hot cross buns make their return! We’re open 8-2 Thursday-Saturday and closed on Sunday this week!
Stop on in and grab some brioche dinner rolls, butter tart puffs, pretzel sandwich rolls, savory miso-glazed carrot puffs, and French rolls, baked fresh every morning.
No stuffed pretzels this week (don’t worry they will be back soon!).

Our test bakes of Polish Sweet Bread came out great this afternoon! We’ll have these to sell when we open at 8am tomorrow (Saturday)! If you missed out on preordering Polish Sweet Bread for next week (we’re sold out except for a few Golden Raisin), we will have some available for walkins on Thursday and Friday next week. Or you can get yer buns here early tomorrow and snag one of these!

Remember when you really wanted a warm, gooey cinnamon roll on a snowy April morning? Come see us. Open Thursday-Sunday 8-2. These guys are still warm.

We finally have the gumption to talk about PSB.
We've been knee deep in keeping up with weekly sales (the amount of support you folks have shown is truly humbling), we haven't had much time to plan for the semi-annual POLISH SWEET BREAD BAKE. And I use all capital letters because if you've baked PSB at home, you know it's an EVENT.
We're ready for preorders now and have it up on our website here (https://www.herbandhoneybakery.com/s/order #23) and below.
Pick ups are for Thursday April 17th and Friday April 18th only. If you need us to hold until Saturday, we are able to do that with notice, but it will be baked for those previous days.
Saturday we'll be baking some other fun specials, like Hot Cross Buns and who knows what this creative team will come up with!
Sunday April 20th we will be closed.

Herb & Honey will be leaving Facebook at the end of April. If you're reading this through Facebook and haven't followed us on Instagram or signed up for our emails yet, please do so. I know we have a lot of followers on Facebook, and I'm very appreciative of your support on the platform. I just can't in good conscience operate on there anymore. Facebook walked back its hate speech policies, openly admits to adding robot users to make up for so many human users leaving the platform, and is rife with misinformation. Coupled with that fact that a lot of folks still on Facebook don't know how to fact check sources and the algorithms it uses expose people to more extremist content over time, it's not a healthy place to be.
I see the comments on local news stories and on government pages. I see the racism, homophobia, the extremely misinformed and hurtful comments. I even saw the bullying of a brilliant and extremely community-minded activist and local business owner. Even if those comments never make it to the Herb & Honey page, seeing them come from Erie citizens is heart-breaking and frankly scary.
If Facebook was a real place that we could go to, I know many of us would not feel safe there. I know that Erie is better than this, and I have to keep believing that my neighbors do actually care for each other and love this city. But to keep believing it, I need to focus on the kind and open-minded conversations I'm still able to have to with my neighbors in person and keep building them. I applaud the folks who remain on here to fight back against the hate. I'm just focusing on building community in person from now on.

Our sourdough crackers are back! This time, they’re a rye & sunflower seed. We have these, butter tart puff pastries, and all yer favorites. Thanks for coming to celebrate with the whole team! This picture gives me all the feels (photo credit: Dad). First because it was warm enough to wear shorts, but most importantly, because I couldn't do this without these kind humans in the picture. They give me so much grace as we figure this all out together and so much creativity and hard work, too. I'm so very thankful for you all. This week the Pastrami Mommies
are back at it.
We literally could not get enough of the pastrami from Federal Hill Smokehouse for our reuben stuffed pretzels. However, I can't convince anyone here to squeeze the juice out of any more sauerkraut (you probably think I'm kidding).
How does a pretzel stuffed with Federal Hill Pastrami, provolone, pickles, and brown mustard sound? We'll have those Saturday and Sunday this weekend! Get in early!
Our weekly special puff pastry is one that a new team member inspired. She brought in some absolutely transcendent butter tarts to share earlier this week. We got to talking, first about our admiration (elbows up!) for our Canadian neighbors from whom this glorious dessert originates...But then about how good butter tart filling in a puff pastry would be. So we're doing just that and drizzling with local honey and some toasted almond.
Last thing! Polish Sweet Bread.
Some folks have already started asking about Polish Sweet Bread. Yes, we will be making it April 17/18/19 and possibly more the week prior. I honestly haven't had a chance to sit down to work out a separate production schedule for this wonderous bread, but rest assured, we will be working hard to get everyone a loaf (or 20--thanks Marie!). Stay tuned for ordering instructions.

Just a reminder that we’re hosting our Grand Opening this Thursday, March 20th at our new location at 516 Cherry Street!
Doors open at 8am, and at 9am we’ll have a ribbon cutting. There will be local artist creating live ‘Joy doodles’ (iykyk) for you, free sourdough culture, and a community scrapbook. Attendees are encouraged to share their memories of this building and of the businesses that have operated inside these doors since 1901 by writing in the community scrapbook, a keepsake that will live here at the bakery and added to for years to come.
We hope to see you Thursday to celebrate!

Holy moly. We sold out of the Reuben pretzels we had planned to make for today in about an hour. Then we baked up the ones we were shaping for tomorrow and sold out of those, too! True story: I’m currently standing in line at about to beg for pastrami to make more Reuben stuffed pretzels for tomorrow. I hope they’re feeling generous, bahaha. I love Erie, and I love Erie’s small businesses. I promise I won’t underestimate your affinity for great food again. 😂 After your shenanigans today, come see us Sunday morning 8-2pm for some savory and sweet sustenance—including more Reuben stuffed pretzels.

These two pastrami mommies are busy prepping the Reuben Stuffed Pretzels for tomorrow! They’re sure to be kraut-pleasers.

I know we’ve been open about a month now, but it finally feels like we’re ready to celebrate it! We hope you’ll join us on Thursday March 20th! Doors open at 8am like usual, and at 9am we’ll have a ribbon-cutting.
There will also be free Herb & Honey sourdough culture for anyone who wants to bake with it at home, free personalized joyful doodles done by local artist , and a community scrapbook. So many people have approached me with memories of this space—from Sophia’s and even before it at Zehe’s Bakery. I’d like to try to honor those and capture them in some way. The best I could come up with is to simply let you folks do the curating.
I’ll have a blank scrapbook here at the bakery dedicated to the folks who have been passing through these doors since 1901. If you’d like to share a memory of this space, please write it down in the scrapbook! If you have any copies of pictures you’d like to leave behind and add to it, we can absolutely put those in, too. The scrapbook will live at the bakery and continue to grow with this community.
