Bryson City location is open Fridays, Saturdays and Sundays 11-5.

Studies have shown that vegetables (such as carrots, spinach, mushrooms and many others) supply more antioxidants to the body when they are cooked instead of raw. Why? It’s likely due to chemical changes that occur during cooking, which makes it easier for the body to break down and absorb nutrients.

Stacy made a super delicious coleslaw using Habanero Extra Virgin Olive Oil and Pineapple Chipolte Balsamic Vinegar for the dressing. She cut apples into matchbook sticks and added it and some raisins to the coleslaw. The coleslaw mixture topped the chicken sliders she made and which was put on brioche buns. Such a creative idea anyone can do to make a simple and delicious sandwich using The Artsy Olive quality products. Thanks, Stacy Loudon for your recipe and photo.

SHOP LOCAL! The Artsy Olive Dillsboro and Bryson City, NC stores will be closed on Thanksgiving Day but will reopen on Friday morning. As always, there are free tastings all day long in both stores, with an abundance of items to sample in the Bryson City location (122 Everett Street).

Chicken Stuffed with either Roasted Red Pepper
Or With Sun Dried Tomatoes
4 boneless, skinless chicken breast halves
½ cup shredded mozzarella
¼ cup fine chopped roasted red pepper (I used Sun Dried tomatoes instead)
2 TBL pitted, chopped green olives
1 TBL chopped fresh basil or 1 tsp dried basil
½ tsp salt
Freshly ground black pepper
2 TBL Mediterranean Oregano or Sun Dried Tomato EVOO
2 cloves garlic, minced
½ cup chicken broth
1 TBL Balsamic (Tomato Basil or Zesty Lemon or a Pear or Apple balsamic work well)
4 cups baby arugula leaves

Cut 3” long pocket into the thick side of each chicken breast without cutting all the way through to the other side Combine mozzarella, roasted pepper (or sun dried tomatoes), olives & basil in a bowl. Stuff some into the pocket of each chicken breast, using all the mixture. Season the outside of the chicken with ½ tsp salt & pepper to taste.

Heat 1 TBL of EVOO in a large skillet over medium heat. Once the oil shimmers, cook chicken breasts til cheese has melted, approximately 4-5 minutes on each side. Make sure chicken is cooked thoroughly then transfer to a plate.

Add remaining TBL of EVOO to the skillet. Once hot, add the garlic and cook, stirring for about 30 seconds. Pour in the broth. When liquid begins to bubble at the edges, stir to dissolve any browned bits in the pan. Add the balsamic and the remaining 1/8 tsp salt & pepper to taste – stir to incorporate.

To serve: divide arugula among plates, top each portion with stuffed chicken breast and drizzle with pan juices.

Saute a thinly sliced chicken breast in Roasted Garlic extra virgin olive oil. Add fresh green beans from the garden, a bit of diced carrots, celery, onions, minced garlic and some mushrooms for a wonderful stir-fry, adding Carmelized Onion balsamic for some additional flavor. Cook the Carba-Nada roasted garlic pasta according to directions, drain, and serve the stir fry over the pasta. YUM. Yep, that's what WE had for dinner one evening recently. So simple and tasty. Easy to make by using veggies you already have on hand and adding some superb quality extra virgin olive oil and balsamic. Also, I recently had some cole slaw at a restaurant where they used a combination of 2 balsamics: Jalapeno Lime and Pineapple for their cole slaw dressing.
