I grew up eating Mediterranean food. Most of it was simple, straightforward, predictable. Good, but not surprising.

Then I started digging into Levantine flavors. The sweet-savory combinations. The way pomegranate molasses can make a whole dish make sense. The way pistachios and olives and fresh mint can all end up in the same bowl and somehow belong there.

That's what this salad is. Pearl couscous tossed with cucumber, red onion, parsley, mint, Kalamata olives, pistachios, pomegranate arils, and vegan feta. All in a pomegranate molasses vinaigrette that is tangy and a little sweet and honestly kind of addictive.

The best part? It holds up beautifully overnight. The couscous absorbs the dressing instead of getting soggy. It's one of my favorite things to make on a Sunday and eat all week.

It works as a side dish, a make-ahead lunch, or something to bring to a summer gathering. And it comes together in 30 minutes.
