I have to admit I'm pretty impressed with this software called NotePerformer. It's designed to work only in Sibelius, and offers a more realistic playback for scores. I think this is a nice option if you want to work purely in Sibelius for a mock up and not have to input MIDI into Logic, for example. No sound sets yet for any pop or jazz I'm afraid, purely classical stuff. This is sans any tweaking or mixing…a fairly nice end result for very little effort.
