Never in my wildest dreams would I believe that Australian beef was just as good if not better than Texas Wagyu, let alone American Wagyu. After picking up this Aussie Tomahawk Ribeye from I am indeed a believer!
With a marbling score of 5+, the pictures speak volumes of the taste, marbling, and tenderness from the of the "land down under."
I highly suggest you check out my buddies . They are local to Dallas but also ship nationwide.
Seared on the soapstone over hot coals of it only took about 6 mins per side to get this steak to a perfect medium-rare.

This Texas wagyu beef lollipop was certainly meat love at first sight when I discovered website.
This chuck short rib is frenched/trussed perfectly to create a delicious beef pop.
I decided to go low and slow on the with it.
Smoked over hickory and at 275 degrees to 195 internal temp.
I highly recommend you check these butchers out and buy yourself a few dozen….the rib pops are only a small part of their offerings!

There is no better way to wrap up a class with some ribs that look like these.
I’d say we pretty much nailed the trio of Baby Backs, St Louis, and Full spare ribs! 👊🏻👊🏻
It’s good to be back out and sharing my passion with others. I’d prefer about a 30 degree drop in temp but that’s what us lovers deal with in the summer!
