When life hands you 9 lbs of Tri-Tip and 4 lbs of Bok Choy, make Tri-Tip Ramen. 🍜
A series of unfortunate events led to this perfect rainy day ramen moment.
On a micro level:
* Whole Foods gave me double the Tri-Tip I needed 🥩
* My Instacart shopper gave me 4 POUNDS of Baby Bok Choy instead of just 4 Bok Choy. 🥬
* Brand new clients canceled on both me and my newly hired chef,
On a macro level:
* I would’ve never hired a new chef or cooked for the Tri-Tip client all the way out in Van Alstyne had not passed away unexpectedly.
Sometimes, great things can come from a series of unfortunate events. Change. Growth. Innovation. Expansion.
Also, ramen. 🍜

Thanksgiving is upon us, and it looks like some of you are scrambling. 😬
I'm offering last-minute premium sides and scratch pies ready to be picked up Wednesday night or Thursday morning on the east side of Little Elm (delivery extra). High quality ingredients. Organic dairy and eggs. That fancy European butter. Limited menu. Limited number of orders.
Place orders in the comments; I'll PM to confirm. Sides are oven-ready and serve 4+. Pies are full-sized. 🥧
And if you know of someone struggling to put food on the table right now, please message me privately so we can make sure everyone has enough to eat. 🥰

No recipe needed for this Heirloom Tomato Burrata Caprese.

✅ Burrata
✅ Basil
✅ Balsamic Glaze
✅ EVOO
Top with and fresh ground pepper to really make the taste of the tomatoes pop!

My business has been on hold due to COVID. I've been pretty quiet lately, but I can't be quiet about this issue. I vow to do whatever I can to support POC, even if it's just being kind, treating people with respect, speaking out against racism when I witness it, and donating to appropriate charities/causes.

Make this 3-ish ingredient cracker, Polly.
🧂Ingredients 🧂
1 3/4 c super fine (yep, just like your mom) almond flour
1 egg
1/2 t salt
Optional: 1 T dried herbs/seasonings of choice (I used Rosemary, Thyme, and seasoning)
Also good: Nutritional Yeast, Chili Powder & Cumin, Basil & Oregano
Directions:
Preheat oven to 350°F. Whisk egg and seasonings together. Add almond flour and mix until you can form a dough ball. Roll dough between sheets of parchment until it's about 1/8" thick. Use a pizza cutter to cut into squares or rectangles and bake on a parchment-lined baking sheet for 15 minutes or until beginning to brown. Flip your pan halfway through if they're browning unevenly. Let them cool so you don't destroy your mouth like I did! 🥵

I typically send out proposed menus a couple of days in advance, and because they're customized to the family's preferences, I mostly get a "Looks great, can't wait!" type of reply.
Sometimes, though, changes must be made to prevent a pint-sized mutiny.

Feeling under the weather after all this weather? 🤧🤒 Get yourself some Vitamin C with this easy, in-season Winter Fruit Salad!
🍎 Ingredients 🍊
2 red pears, cored and chopped
2 Honeycrisp (or your favorite) apples, cored and chopped
3-5 clementines or mandarins, segmented
5 kiwis, cut in half, peeled, and sliced into half moons
1/2 cup pomegranate arils
2 bananas, sliced
2 T lemon or lime juice (or combo)
1 T honey
1/4 cup mint chiffonade (that's fancy for "slice into little tiny ribbons")
Mix all of the fruit in a large bowl. In a small bowl, mix the citrus juice with the honey, then pour over the fruit. Sprinkle mint over the top. Gently toss fruit to distribute dressing.
* If not serving immediately, save the banana to add just before serving.
