Ok, so today’s recipe is peanut butter banana overnight oats. Very simple recipe. Pampered chef tools I’ve used are: classic
Batter bowl and the one cup prep bowls. I find I use these one cup prep bowls a lot. I like that they actually have measurement markings on them so you can measure everything out then add it all together in the batter bowl.

I prepped this last night before going to bed and had it this morning. I did substitute crunchy almond butter for the peanut butter. I really liked the added texture of the almond chunks.

So last week I had a really hard time eating healthy...well actually with eating period. I think it was due to a few things:
1. Not knowing what there was to eat
2. Lack of anything healthy that was ready-made or “handy”.
3. Lack of planning ahead.
4. Breakfast & lunch are the toughest meals.
I also found that because I wasn’t doing well eating earlier in the day, I had very little energy to cook dinner in the evening.
So this week, I sat down and did some planning. I will be posting each day this week one meal recipe per day...And I will include the Pampered Chef products that made my meal prep easier and more fun, so stay tuned.

So tonight for dinner I made flat bread pizza. I had two premade rectangular flat breads. On one I put plain olive oil, pampered chef garlic basil rub seasoning, fresh spinach, mushroom, chicken and artichokes and topped with mozzarella cheese and fresh garlic. The second I used regular marinara sauce, mushrooms, chopped olives, mozzarella cheese and fresh garlic. Bake them both @ 425 for 24 mins.

Can I just say how much I love this air fryer. We had a smaller one before this and loved it just as much. Can’t believe how much easier cooking is with it.
