It’s been a year of tumult at Uptown mainstay Georgie, which dismissed two executive chefs while vying for a Michelin star in 2025. The solution? Hire one of the best chefs in Dallas’ history. Bruno Davaillon, formerly of Bullion and The Mansion, has updated the menu of classic and reinvented French dishes, while pastry chef Dyan Ng serves up fireworks at dessert. Unlike the cookie-cutter Holiday Inns of the world, Stephenville’s Interstate Inn has stood out for decades with its one-of-a-kind sloped roof. It grabbed the attention of Dallasite Lisa Lennox and her sister Cathy Bonner, who had been on the lookout for a roadside motel in need of a glow-up. In January 2025, the siblings unveiled the revamped Interstate Inn, a 33-room boutique motel whose retro-luxe vibe would feel right at home in a Slim Aarons photo.
