We own EJ Flomo Cocoa farm in Lofa County, Liberia. Our chocolate is made from our freshly harvested, single-sourced cocoa. We use 3 ingredients in our fine flavored chocolate: premium cocoa, organic cocoa butter, and unrefined organic cane sugar. We sell our chocolate to benefit our farm workers and their families. Though we are not producing on a grand scale, or even large scale yet, we are very proud to show you proof that we make our chocolate directly from the cocoa beans that come directly from our farm, EJ Flomo Cocoa, where the pods are grown on trees from our mother trees' seedlings.
I always speak highly of craft bean-to-bar chocolate makers, but even in this lovely community there are people that lie, cheat and deceive 👥️🍫
Here are my most memorable experiences:
1) I was suspicious of what claimed to be a craft bean-to-bar chocolate brand that never showed any chocolate-making machine on their social media accounts.
At a festival I had all my doubts casted: an actual craft chocolate maker whispered into my ears that they were the ones making chocolate for that brand 🖐🏼
Once I took a closer look, I realized that EVERYTHING (cacao %, added ingredients, type of sugar, cacao origins) matched the products that the real chocolate maker was already selling.
It turns out that countless brands pretend to make their chocolate. They buy private-label chocolate and dress it up with their own packaging. They’ll talk all day about cacao origins and the life of a chocolate maker. But in reality, they don’t own a single bean-to-bar machine.
2) I was a judge in an international competition and was tasting the dark chocolate entries at home.
I recognized a specific brand by its mold design (it didn’t matter, as I don't have any reason to give a better or worse grade than what a sample truly deserves). It was amazing chocolate though, so it stuck to my mind and I wanted to try it again.
In the 3 following occasions where I tasted that same brand, the experience was horrible all the way from texture to flavor. I was puzzled 🤨
Then somebody told me about the trickeries that go on during chocolate competitions, where some brands will use the best cacao beans only for competitions or will straight up use somebody else’s chocolate.
3) I also encountered chocolate makers using the finest cacao beans, but the cheapest cacao butter. Some pretended to use their bean-to-bar chocolate also for their bonbons while it was cheap couverture. Some more even faked direct trade while they were buying from distributors. And don't get me started on all the undisclosed added ingredients I saw 🫣
98% of the people in this industry are transparent, honest and adorable. But always keep an eye open!
