Every one please welcome Liz Frink, another one of our beautiful, passionate Board of Directors! She has a story that can resonate with many. Take a second to hear about why she decided to become member #33 for the Elk River Area Food Co-Op and her plans for making this store a reality!
"Hi! My name is Liz and I was member #33 for the Elk River Area Food Co-Op!
My journey started a little over two years ago after my twins were born and I got so sick and struggled to manage my two kinds of arthritis.
That Winter I got strep throat twice (even though my tonsils were removed 15 years earlier!), the flu, and every cold imaginable. My arthritis was so flared I could hardly walk or even function most days and my RA doctor was pushing me to get on the next, biggest, baddest drug. I knew something had to change. I tried a detox diet and then did the Whole30 plan (a clean eating plan for 30 days) and felt better than I had in years! That’s when I knew my health was completely in my hands. I knew I could control my quality of life with my diet and lifestyle! I never considered myself an ‘unhealthy’ person before Whole30 but afterwards I learned how much stuff we might be eating that’s making us sick that we don’t even realize. This process has really ignited a passion in me! A passion to learn to eat (truly) healthy, nutrient dense food and to know where it comes from!
I love the idea of a local Co-Op for many reasons, but mainly to support local small businesses (such as the nice family that runs Walker Farms that I get my eggs, chicken and pork from or the gal who runs Sissy's Fresh Farms who provides incredibly nutritious microgreens and also the gal who makes the most wonderful smelling soaps from Caraldon Soaps!). I love supporting them in their business instead of the larger corporations. I enjoy seeing their passion and their true quality care for the products they produce, compared to the very disconnected larger corporations.
I started volunteering for the Elk River Area Food Co-Op last March and have become even more driven to get this store opened up! My goal for being on the board is to get a store opened with as much ethically produced products from as many local vendors as possible. I would also really love to help with getting a deli or restaurant opened inside the Co-Op that would have healthy, clean eating options for every type of diet including vegan, gluten free or paleo. I would love to be able to enjoy the convenience and fun of eating out with my family of six without the guilt of what we are eating. I look forward to bringing my passions and enthusiasm to this board and getting our Co-Op opened very soon!"

Yeah, Yeah....the hubby and I where at the Elk River Food Co-op Annual meeting last night. What a great looking group of people I must say:)
A huge thank you to our members who came out to celebrate all the Co-Op accomplishments at yesterdays annual meeting! If you didn't make it here is what you missed...
Celebration #1 - We have doubled membership since last years annual meeting. DOUBLED, meaning twice as many people are inspired to help a great cause! Thank you all for your commitment and support.
Celebration #2 - Elk River Area Food Co-Op was awarded a $10,000 grant from the Food Co-Op Initiative. We were chosen out of twelve other competitors in the NATION, that's pretty amazing. That right there is a sign of trust and a huge pat on the back for our vision and efforts!
Celebration #3 - We voted in five new members, three of which are brand new to our Board of Directors! That means we are building our team to better serve our community. More Directors means more ideas and more energy behind every decision we make. Stay tuned to hear about the new directors and why they decided to serve YOU!
Celebration #4 - We hired a Marketing and Outreach Specialist to help spread the word and inform and educate the community on what a Co-Op is and why it is so important.
Celebration #5 - We live in a beautiful community with over a 160 individuals who have put their money and confidence in our hands. Now it's time to work together to make this thing happen. If you're a member get three friends or family to sign up. If you're not a member, sign up today. The stars are aligning, we just need an extra push to build this army!!

Vermicomposting is what we do here at the farm. Worm bins are full....do I start another bin or get on my maintenance guy to get my worm tumbler built?
