one year ago โก๏ธ today. Weโre celebrating 7 years of marriage today!!
Over the past 12 months we added one baby, and lostโฆlots of sleep. And maybe some hair.
We have a feeling this year is going to be our best yet, for sure. One might even say a blowoutโฆ(zoom in for a surprise ๐ซฃ)

Made some pour over with the bag from my previous post, Inmaculada from
Wanted to compare the pour over to the espresso I have been making with these beans.
Todayโs pour over recipe:
Brewer used: Kalita Wave
1:16 ratio
22g coffee
350g water
3:30 min brew
First and foremost it was very tasty! I really enjoyed it and will definitely do it as pour over again! With that said though, I think Iโm going to tinker with the pour over brew process to see if I can get an extraction with more depth of flavor. This cup I made only hinted at the roastersโ flavors. Going to start with going a tad finer on the grind so the water drips through just a bit slower and extracts some more flavor on the way down.
But again, this coffeeโฆ *chefโs kiss* ๐๐

Going to be sharing some content and some tasting notes/thoughts in the coming weeks on beans from one of my favorite coffee shops and roasters!
As a lot of you know and I spent a month in Florence, Italy last fall. Weโd go most days to work out of the Ditta Artigianale coffee shop in the Oltrarno neighborhood and we fell in love with the entire vibe of the place, from the people to the coffee to the food and everything in between!
When we were leaving Florence, we got 2 espresso cups from them to take home with us and just recently Christina bought me a bunch of bags of beans from them for my birthday!
So, between the espresso cups and bags of beans, pretty stoked to be able to have an essence of the Ditta culture and environment with us. Canโt wait to get back there sometime!
Today I tried their bag of Single Origin Geisha beans sourced from in the village of Pichindรฉ in Colombia!
The aromatics of this, both from the dry beans and poured espresso, was soooooooo good! I got so much citrus and fruit both from the smell and taste. As the espresso cooled, it got even more citrusy. I honestly donโt have enough experience with the flavor of lemongrass to know whether I tasted that (which I plan to work on) but regardless, it was absolutely delicious. Ditta nailed this roast!

The drive through Passo Gardena is mind bogglingly spectacular on any day, but on a stormy cloudy day it is so mysterious. And it almost makes the Dolomites mountains feel even bigger in a way because you just see their peaks just peak out (intentional pun) for a moment and then they disappear back into the clouds. The sunny clear days are incredible, but the cloudy days are super special! I hope you can see both sides when you visit!

The dichotomy between the landscapes here in the Dolomites is just so cool! To have bright green meadows and dense pine forests next to massive limestone rock shooting up out of the ground definitely makes this place a photographers playground.

Been having fun on this trip doing something called the โno scopeโ where I just point and shoot, typically on foot, and then look later to see what I got. This shot was actually from the car as we were heading up into Gardena Pass in the Dolomites! On a short straight away at a slow speed, eyes on the road the whole time, picked up the camera in my right hand and shot out the window without looking, hence the no scope! And to my delight, found this shot later on in the files! I dig!!

You all ever notice how much of your content gets forgotten about on your old hard drives? I often think, โI just need to go create some more content!โ And then I get overwhelmed, and then donโt end up sharing anything, for days, weeks, sometimes months, haha.
