Chefs say the biggest shift is the unknown, inspectors arrive anonymously, raising the stakes for every service. But with that comes a chance for Cleveland to gain broader recognition and attract more food-focused travel.

For a city that has steadily built its culinary reputation, this moment could mark a turning point.
