I’ve been eating a lot of take out these day, like most of America, and saw on and decided to give it a try. The poppers were amazing. Loaded with cheese, wrapped in bacon, and smothered in sweet and tangy sauce, dipped in their parsley driven ranch. The Mac and cheese burger held up nicely for delivery and delivered a great flavor with each bite.

Local Mustard Greens slow simmered with thick cut bacon, onion, and garlic.
A friend gifted me with two bags of greens from up the road. The freshness can be tasted even after cooking for 3 hours.
An easy dish to set and forget in your Dutch oven that will please every lover of bacon.

Glorious Green Tomatoes were grilled and then laid atop a bed of crispy bacon and a slaw of Napa Cabbage dressed with a spicy bacon vinaigrette.
This take on a BLT salad was then dressed with a thinned remoulade and whole capers.
Tangy and tasty this is a salad that delivers.

While this strip was just okay, those curious disks on the right are sautéed green tomatoes.
I coated them in salt, pepper, and garlic powder before cooking them in the cast iron with the steak that was heavily seasoned with chili powder, cumin, and cayenne.
I topped them with sautéed onions that were used as a steam bed for the steak after it’s sear and a drizzle of fresh ranch dressing.
That was the star of the night for me.

Fresh and local tomatoes as red peppers were steamed, roasted, and then puréed into a glorious sauce that I braised some lucky b/s chicken breasts in for 2.5 hours.
The layers of flavors that developed here were incredible.
Salt, oregano, black pepper, and thyme were all that were added to the veggies to make the sauce sing.
The loaf of sourdough I had made for the best vehicle for the sauce in the end. 😂
