Moonbeam Ice Cream Cookies

Last year, my son chose the Moonbeam Ice Cream Cookies from Crumbl as one of his birthday treats, and he absolutely loved them 💜💙💛

Recently, he started asking for them again… but it doesn’t seem like Crumbl offers them anymore 😭

So naturally, we did what any baker’s kid would expect—we made them ourselves! 😆

I’m happy to report that they came out perfect and tasted just like we remembered. Soft chocolate cookies topped with colorful lemon/berry moonbeam-inspired frosting, cookie crumbs, and a white chocolate drizzle.

Honestly, I think my son was just as excited to have them again as he was the first time 🤗

Sometimes the best treats are the ones made at home, especially when they’re tied to special memories ❤️

Did anyone else ever have a favorite limited-edition treat that disappeared and left you wishing it would come back? 👀

I’m sure many of you have seen these all over social media lately… and if you have kids, they’ve probably already asked you for one! 😆

My son had been talking about them nonstop and finally convinced me to make a batch for him and his friends. Needless to say, they were a hit!

A fluffy layer of vanilla cake, a delicious layer of Swiss meringue buttercream, and a colorful blanket of crunchy rainbow sprinkles make these such a fun treat for birthdays, sleepovers, movie nights, or just because.

Now I’m curious… 👀

Our sixth cake as a Sugar Angel for Icing Smiles, Inc. . Icing Smiles is a nonprofit organization that provides custom celebration cakes and other treats to families impacted by the critical illness of a child.
