I hate baking except for these vegan, cannabis-infused chocolate chip brownie cookies. 🌱🍫🍪
I tried them out last night (simply for testing’s sake 😏) and let’s just say 💤 🤣

Simple, quick, and so very 🔥 delicious. This is my for real go-to snack.
I smash a couple of English cucumbers with my mortar, chop ‘em up, and let them drain while I make the dressing. The dressing is simple too: 👇🏽
In a medium bowl, whisk:
1 tbsp sesame oil
2 tbsp chili oil
2 tbsp soy sauce
1.5 tbsp rice vinegar
1.5 tbsp seasoned rice vinegar
1 tsp ground ginger
3 large cloves garlic (finely chopped)
2 tsp toasted sesame seeds
1 tsp salt
7 chopped Thai peppers (I like it 🔥, you can adjust or omit)
After the dressing is whisked, I just add in the cucumbers and stir so every piece of cucumber gets some covered. I usually set it in the fridge to chill while I clean up or I leave it longer and maybe eat it the next day. Still crunchy and even tastier! What do you think? Could you stand the heat 🔥? 🤣

Vegan Shrimp Salad Two Ways 🌱🥗
I have a LOT of vegan shrimp in the freezer so expect to see it often. 😉 This time it’s shrimp salad. A very easy recipe. I just combined a lil vegan mayo and sour cream, added the juice of a lemon, dill, lemon zest, shredded nori, capers, and Old Bay to make the dressing.
Next I combined the dressing with the shrimp, and finely diced onions, celery and red bell pepper. Salt and pepper to taste. I ate it on garlic toast and also as part of a much larger salad.
Delicious! I told ya vegans miss nothing. Have you gotten into vegan shrimp? Thoughts?
