Mole isn’t just one sauce. it’s a family of sauces with deep history.
Some classic types include
Mole Negro dark, rich, and complex
Mole Rojo bold and chili-forward
Mole Verde bright with herbs and pumpkin seeds
Mole Amarillo lighter and savory
Mole Coloradito balanced and slightly sweet
Each region and family has its own recipe, often made with toasted chilies, nuts, seeds, spices, and sometimes chocolate.

Welcome to our tasting with Gracelyn & Will! We call it The Lab - it is a time when couples our hosts of any event can meet us as we develop their cocktails together. It truly is a lab as we arrive inspired by the palate profiles & with house ingredients to design and create and taste together. It is an occasion to remember and allows us to get to know you better. Why yes! We do offer stand alone tasting experiences hosting 2-6 guests. Please feel free to call to inquire about pricing. Cheers!
