I don’t know about everyone else, but the inconsistency during these uncertain times has thrown me for a loop. Over the last few weeks, I have tried to pre-plan my lunches and my exercises so that way I had a goal set for each day for myself. This has helped me stay consist and stay on plan!

Almost 9 months ago my oldest child, Cody, left to serve our country through the Air Force. When he left, we set a challenge for each other, I was going to lose weight and he was going to gain muscle. After 2 1/2 months of trying this journey on my own, I joined Profile.
Today, I am so thrilled to know that I am only 17 pounds from my goal and I have lost a total of 55 pounds thus far and 39 of those pounds I lost through Profile. This journey has not been easy but the results are so worth it! I have learned to eat 90-10, exercise daily, speak daily mantras, and even tried out listening to a podcast during my walks. While on this journey, I have been looking for ways to not allow my mind to over analyze too much of what’s happening in and around my life while on my long walks. Yesterday, after recommendation from my coach, I tried my very 1st podcast. I loved how it allowed me to zone in on a topic while continuing to keep up my 3 mile walk.
I chose Brené Brown’s Unlocked as my 1st choice as I have watched her speak before and found her very inspirational and real!

If you're looking to kick the potato chips habit, this one is for you!

Zucchini Chips:

Ingredients:
- Thinly sliced zucchini
- non-stick spray
- spices to taste - salt and pepper were used in the video

Directions:
Make sure your thin zucchini slices are dry!
Put salt, pepper, and non stick spray on your cookie sheet.
Add you zucchini slices on top, don't overlap them too much.
Add salt, pepper, and non-stick spray to the unseasoned side.
Put it in the oven at 235 degrees for 90 minutes, or until they are crispy and golden brown.
Enjoy!

Note: This recipe is all vegetables, so eat as much as you want!

It can be pretty spicy since the chips dehydrate and concentrate flavor.

If they cook unevenly, stir them around or remove some early like I did!

Need some inspiration to switch up your weekly meals?

Try this recipe for our Prik Pao Beef 😋

Ingredients:

Your portion of lean meat in steak
1 C broccoli
1 C Mushrooms
2 T fish sauce or soy sauce
1/4 t Korean chili flakes or regular chili flakes
1/4 C shallot or red onion
2 cloves of garlic
1 t of vegetable oil (split)

Instructions:

1. Create your sauce by blending the soy/fish sauce, chili flakes, garlic, and red onion/shallot.
2. Get a non-stick pan hot on medium/high heat and brown your sliced steak with 1/2 t of oil. Repeat this with your mushrooms and broccoli. Don't cook it to 100% doneness!
3. Combine your veggies, steak, and sauce in the pan on medium heat and cook it for a few more minutes, until you think it is done.

Enjoy!

Exchange: 2 C veggies, lean protein, 1 fat, 1 flex.

Notes: This dish was adapted from Thai takeout food popular here in the US. We recommend using the Korean chili flakes, shallots, and fish sauce if you have them, but use what you have!

Optionally, add a bit of monk fruit sweetener to the sauce for that familiar Thai sweetness.

Have you tried Profile cold brew coffee??

Ingredients:
Coffee grounds and water!

Instructions:
Cold brew coffee is best made by letting coffee grounds and water sit at a ratio of 8:1, water to coffee.
- For best results, fill a container 80% of the way with water (and measure how much you put in), then add 1/8th of that measurement of coffee.
- Let it sit in the fridge for 24 hours, and then strain it.
- Dilute your cold brew concentrate with water until you like the taste because it will be strong at first!

It will stay good in the fridge for two weeks - Use 8 ounces for your shake, and enjoy!
