Proud of this one! Homemade mashed potatoes (I just add a little cream and mayo to the potatoes then mash) a preseasoned pork lion (I found a mushroom flavored one on sale that was low sodium)
After cooking the pork I deglazed the pan with a little water and made a brown sauce by adding that to a rue.
Then finally some low sodium canned green beans cooked with unsalted butter and pepper. (My fresh ones aren't quite ready yet)
Then some rosemary bread on the side.

Made "mexican" macaroni. Used a little taco seasoning, a bell pepper, jalapeno pepper and mexican blend cheese with cream and a bit of chicken broth. (Also added garlic powder and red pepper flakes)

Dinner tonight,
2 cans diced low sodium tomatoes ( italian style if you can find it, if not just ad a tablespoon of Italian seasoning)
1 tablespoon basil
4 cloves of garlic
Half an onion, diced
1 sweet red pepper, diced
Put all of that into a pot and simmer until everything is soft, then blend until smooth.
Boil your bow tie noodles until soft
Chop up 3 small chicken breasts into cubes and put into your blended sauce on the stove on a medium low heat,
Add cream to your taste (I like about 3 or 4 tablespoons, eyeballed)
Add in a tablespoon of sugar (or more if you like sweeter soups)
Add Salt and Pepper to taste
After chicken is cooked through and noodles are soft, combine!
( I also added spinach to mine before the sauce was done because I had spinach that needed to be used but that is optional)
Cheese is optional, I used Parmesan but if you want a thicker cheese mozzarella would work too.
Made homemade tomato soup tonight! I had never made it before but it came out really nice! Will post recipe tomorrow!

Quick lunch today!
Rice
1 can Tomato sauce
1 tsp Italian seasoning (I added extra basil)
1 wedge of lemon (juiced)
A little brown sugar (about a tbsp)
1 tbsp Balsamic vinegar
Quarter of an orange pepper, finely diced
1 clove of garlic
1/4 cup Italian mix cheese (or more if you prefer)

Dinner tonight. Nathan wasn't home so I used left-overs that we had (a single fish filet, last bit of rice in a bag) Homemade shrimp sauce's recipe is in the last post. On the fish is ground ginger, red pepper flakes, a little bit of wasabi from the sushi, and lemon juice. I also steamed it with some of the ginger slices in the sushi container. The sushi is sold at my local walmart, but is made locally every day.

Here is a really good recipe for a "healthier" yum yum/shrimp sauce. It is also relatively low sodium.
Just had this tonight with white rice and steamed fish! I steamed the fish with pepper and a fresh lemon, and it was a great low sodium meal!

Today's post is a little different. I'm just sharing how I make a southern staple.
Sweet Tea!
Its super duper simple.
Boil a pot of about 4 cups of water on the stove. I use my biggest pot just because the water boils fastest in it.
Add in 2 cups of sugar as the water gets hot but before the water boils and stir until the water is clear.
As the water gets to a boil turn off the stove.
Put in 4 Luzianne tea bags. In my opinion this is THE tea brand. (Not sponsored)
Let the tea bags sit until the water is cooled down. (The darker the water the better) ~ 20 mins.
Pour into your gallon pitcher and fill the rest with cool water.

Sweet Potato Fries - No Salt
Here's a super simple and easy to make side dish!
You'll need
Olive oil
Seasoning of choice
Sweet Potato
Simple!
Just cut up your sweet potato (You can peel them if you don't like the skin)
Drizzle a good amount of olive oil on them and toss them with your seasoning (I chose italian seasoning and pepper)
Preheat oven to 400° and bake until desired crispyness. I prefer mine a little softer (25 mins in oven) but you do you.

First tomato of the season! Its waaaay late but I figure I'm lucky to even get any considering I live in an apartment complex and had a tiny bed to plant them in.
