Following the Palmetto Trail as the guiding pathway from the mountains to the sea, the expedition will highlight the ‘South Carolina 7’ named for the seven geographic wonders unique to the Palmetto State.
The purpose of the expedition is to bring attention to the natural marvels that need our protection and the outdoor adventures that await us from our own backyards and beyond. Along the route will be opportunities to discuss topics such as conservation, resiliency, adult and childhood fitness, outdoor therapy, floodwater-mitigation issues, and more.

Day 18: Sweet Potato
They contain truly awesome amounts of Vitamin A — between 500 % & 700% of your recommended daily intake in just one cup.
Sweet potatoes also contain Vitamins C and B-6, manganese, potassium and several other vitamins and minerals.
They are even good sources of iron and calcium. Sweet potatoes are also thought to be helpful in blood sugar regulation.
Healthy way to eat:
When cooking whole sweet potatoes, pierce their skin several times with a fork and bake at 400°for 40-50 minutes or until fork tender.
And get to know the savory (rather than sweet) side of sweet potatoes, especially in these combinations: sweet potatoes and rosemary; sweet potatoes and chipotle chiles; and sweet potatoes and cumin.
Sweet potato leaves and young shoots are also eaten as part of the cuisines of a number of cultures, including Chinese, Polynesian and Filipino.
If growing sweet potatoes in your garden, incorporate the leaves and shoots into a meal as well as the root.

Day 11: Winter Squash
Healthy for you because:
Winter squash is an excellent source of vitamin A, in the form of beta carotene, vitamin C, potassium, dietary fiber and manganese.
They are a great source of folate, omega-3 fatty acids, vitamin B1, copper, vitamin B6, niacin and pantothenic acid.
Squash is a delicious source of fiber that can leave you feeling fuller for longer.
Healthy way to eat:
Roast squashes before peeling them: cut them in half or quarters, scrape away the seeds and fibrous membranes, roast at 425º F on an oiled, foil-lined baking sheet until fork tender.
Mash like sweet potatoes, blend to make stew and incorporate into smoothies.
Winter Squash is susceptible to a lot of pests, therefore growers often use a lot of pesticides on them. Try to buy organic if possible.
Despite the name, winter squash is harvested in summer and can be stored through winter so it will be seasonally available the last half of the year in the Lowcountry.
