The bill has a 5-year phase in period, starting at the minimum for Texas labeling now, which is 75% (yes a bottle of wine can read “Texas” and still be 25% grapes, juice, wine from out-of-state) and raises the minimum by 5% every year until we reach 100%.

Wine from out of state can still be brought in, bottled on its own or blended, but will no longer be able to use “Texas” or any of the AVA’s (Texas Hill Country, Texas High Plains, etc) or vineyard designations like Round Mountain Vineyard, Robert Clay Vineyards, Lost Draw Vineyard, Newsom Vineyards, etc. This ensures that when you buy a bottle of Texas wine, you’re getting an authentic product.

Have you ever purchased an entire building from a catalogue? Hiram Brown did. Back in 1904, Hye decided to build a nicer more permanent structure for his general store and post office. He ordered a kit-building from a catalogue similar to Sears, Roebuck & Co. and constructed it on the south side of the Fredericksburg-Austin road. The original structure still stands today and serves as the main dining room for the Hye Market Restaurant. Found within the dining room is the original post office, which is still operational.

Here’s how one Texas winery is taking things to the next level. Always on the cutting edge and elevating the Texas wine industry.

We have some big and exciting news to share with everyone!

First off, Perissos Vineyard and Winery would like to formally and proudly announce the addition of Jeremy Wilson, our new Sommelier, to the Perissos family! Jeremy brings with him five years of experience working in the Texas wine industry. His experience ranges from having worked for two top Texas wineries on Wine Road 290, Pedernales Cellars and Kuhlman Cellars, to writing wine- related articles for publications such as Texas Hill Country Magazine, and in the past for Lodiwine.com, and the Texas Wine Lover website. His article on Sulfites won the 2016 Millesima Blog Awards when he was writing for Texas Wine Lover.

At Perissos Jeremy will be doing a little bit of everything, such as creating and hosting our new elevated tasting called the Perissos “Farm to Glass Sensory Experience”. He will be teaching wine classes for our Wine Club Members, representing the brand at outside events, and providing professional photography and social media for the winery. Be sure and stop by to say hello to him next time you’re visiting!

Speaking of an elevated experience, we're super excited to launch the above mentioned tasting experience that has been under construction and under wraps recently. Without furthur adieu, here is the other big news!

Starting this Saturday, June 9th, Perissos is launching an all encompassing tasting and educational journey called the "Farm to Glass Sensory Experience". Here are the details:

The Farm to Glass Sensory Experience is going to be offered to Wine Club Members, as well as to the general public.

This is a reservation based tasting experience. Reservations are to be made by email: [email protected]

Schedule:
Saturdays and Sundays on 2 hr blocks, 12pm, 2pm, and 4pm.
*Availability is subject to change periodically based on scheduling, winery events, and seasonal work such as harvest, etc.

Each seating is limited to 6 people per appointment slot. This allows for a more intimate and concise tasting experience for everyone. Space will be limited, so please try and book in advance if possible. We are always happy to take walk-ins at the winery if our schedule allows for a certain appointment time.

What does the experience include?

The goal of the Farm to Glass Sensory Experience is to awaken the senses in multiple ways! Each tasting experience will consist of a personally guided journey one on one with Jeremy to include; An educational walk through our Estate Vineyard, an educational and concise wine tasting which includes 5 off-menu or library Perissos wines, each meticulously mated alongside gourmet Charcuterie, and finally every tasting will conclude just like we would a meal in Italy, with Espresso as a Digestif.

Price:

The Farm to Glass Sensory Experience is $50.00 per person. Wine Club members will receive their 25% discount toward their tasting and bottle purchases.

This is primarily a meat and cheese based food pairing being Charcuterie. If you have gluten intolerance, or are vegan or vegetarian, please advise when you schedule your appointment. The options for coffee are either a double shot of espresso, or Cappuccino. We proudly will rotate and serve only Texas roasted coffees! Our espresso is handmade for each tasting. Please allow time for drink production as we conclude each tasting experience.

We are sooo pumped to share our love and knowledge of growing wine, and to offer delicious food and coffee to you as part of our Farm to Glass Sensory Experience! You will learn all about our farming practices, winemaking style, soil education, including visual analysis of soil samples, food and wine pairing chemistry, and why the Europeans finish their meals with coffee.
