🔸BAKED SWEET POTATO • BLACK BEANS • BROCCOLI 🔸

Just 3 simple, whole food ingredients is all you really need to create a nourishing and very delicious meal, side, or even a snack depending on your portion size.

This is what I provided my kids last night - along with a plant based protein source - and they each “doctored” theirs up according to their personal preference. This photo is from Eden, my 15 year old daughter’s, plate and it just looked so deliberate, I couldn’t resist a photo 🤗

The abundance of nutrients provided by these 3 foods is so impressive...and a lot of bang for the buck 🙌🏻 The sweet potato, alone, is an excellent source of Beta Carotene which converts to Vitamin A - a powerful disease-fighting antioxidant. But with this simple dish you also get plenty of fiber, iron, protein, calcium, folate, and Vitamin C.

You can take this up a notch by drizzling tahini or any nut butter over it; adding avocado or topping with guacamole or hummus; or enjoying it with your favorite salsa 💃🏻

This dinner is always a crowd pleaser so I love making it for my family. Better still, all I do is bake the potatoes on a sheet pan lined with parchment paper, drain and rinse a can of black beans, and blanch broccoli florets (you can even buy them pre-cut for convenience) so the clean up for me is a breeze 👍🏻

PRO TIP 👉🏻 You can have all ingredients prepped and ready to go in the fridge for fast and easy meals/snacks during the week. Or you can just store any leftovers and use them ✅

Sometimes I want to shake people and scream, “FRUIT DOES NOT MAKE YOU FAT!!” 🤦🏻‍♀️

When people actually believe they shouldn’t eat fruit because it’s high in sugar, I want to point out that fruit is a WHOLE FOOD found in nature and there is a significant difference between this complex natural fruit sugar and simple processed sugars 🍏🍌🍇 > 🍫🍪🍷

Most importantly, fruit contains soluble fiber which is absorbed more slowly into our bloodstream and may actually lower the risk for diabetes and even help with weight management. Unlike processed sugar, which increases the risk for diabetes and promotes weight gain.

In addition, soluble fiber binds with the “bad” cholesterol as it travels through our bloodstream, and removes it from the body. This can decrease our risk of heart disease, while also helping to lower blood pressure.

Soluble fiber also promotes healthy bowel habits and may improve colon health 💩👍🏻

And if all this isn’t enough to convince you it is safe to eat fruit, know that it is virtually fat free, quite low in calories, and naturally abundant in vitamins and minerals. Many fruits are particularly rich in antioxidants which protect our cells and help fight disease 👊🏻💥

Think of fruit as NATURE’S CANDY that not only provides you with fuel your body can use, it can actually help wean you off those addictive, blood sugar spiking processed sugars that are basically just empty calories with zero nutritional value. Depending on your overall daily caloric intake, as well as your activity level, enjoy at least one serving of fruit per day or as many as four - but definitely include a variety. Always think 🌈💖
