A lot of how Austin approaches quality was shaped early on by his dad.

Growing up under Jim meant learning to care deeply about doing things well, but also learning that improvement usually comes through willing to be evaluated, receive constructive criticism, and keep refining. That mindset has carried over to coffee in a big way.

There’s something really meaningful about seeing how those values passed down. A respect for process, a high standard for quality, and the humility to keep learning.

A lot of what we believe about quality here didn’t just show up overnight. It was built over time, and a lot of that started here.

There’s something really special about getting to share this with family.

Having Austin’s dad Jim at the roastery, tasting coffee and getting to be part of the process for a bit, meant a lot. He comes from a long background in the cheese industry in Wisconsin, so he knows a thing or two about craftsmanship, sensory work, and the kind of care it takes to make something well.

Moments like this just remind us how connected good things really are; people, process, craft, and getting to share it together. 💡

Here at Epiphany Coffee, every roast carries a lot of intention behind it.

From the way we approach each profile to the small adjustments and attention along the way, there’s a real amount of care that goes into every batch. Roasting is part instinct, part discipline, and part learning how to listen well to the coffee in front of you.

We wanted to share a little glimpse of that process, not just the movement of it, but the heart behind it too.

Right alongside the Pacamara Honey, we’ll also have this Geisha Natural from Santa Emilia in El Salvador and it’s a beautiful one!

Geisha is one of those varieties that tends to stand out right away, known for its elegance, complexity, and expressive character in the cup. With a natural process, the coffee dries with the fruit still in the seed, which often brings out more fruit-forward sweetness and a really vibrant profile.

Coffees like this are a big part of why we love what we do, and we can’t wait for you to taste them! 💡

Not all coffees know how to make an entrance, but this one definitely does.

One of the two coffees we’re hoping to have available in late July is this Pacamara Honey from Santa Emilia in El Salvador and it’s a really special one.

Pacamara is a variety with deep roots in El Salvador, known for producing coffees with a lot of complexity and presence in the cup. With a honey process, some of the fruit is left on the seed during drying, which helps create a sweeter, more syrupy, more fruit-forward profile.

What makes this one feel even more special is where it comes from. Santa Emilia is part of a coffee growing tradition that carries so much history, care, and intention, and that really comes through in the final cup.

We’ve been looking forward to this one: our El Salvador coffees will be landing soon, and if all goes well, they should be available in late July.

We’ve got a Pacamara Honey and a Geisha Natural on the way, and both feel especially meaningful to share. It’s special to get coffees that have been cultivated by the same family for generations. Coffees that carry so much history, care, and intention behind them.

Their coffee is hand harvested, processed with a strong focus on traceability, and produced across washed, honey, natural, and anaerobic methods. That kind of care shows up in the cup, and it’s a real honor for us to be able to share these two coffees with you.

More soon, but we wanted to give you a little preview of what’s coming. Really excited for you all to taste them! 💡
