With Spring right around the corner, and temps in the mid-70’s, I couldn’t resist getting some seeds planted and letting them enjoy the sun/warmth on our patio. ☀️

The verdict is in. The muffins are INSANE!

These blueberry streusel muffins deserve a permanent spot. Holy moly they are sooooooo good!

This was a true work smarter not harder recipe. Good luck just eating 1. 🤤

Recipe:
Preheat oven to 375 degrees
You can use 12 standard muffins of 6 giant (which is what I made)
Muffin Ingredients:
1 box of Krusteaz wild blueberry muffin mix
2 eggs
1/2 cup vegetable oil
2/3 cup water
1 cup fresh blueberries
Streusel Ingredients:
1/2 cup all purpose flour
1/3 cup sugar
1/2 tsp baking powder
1/2 tsp ground cinnamon
4 Tbsp butter, cut into pieces

Directions:
Mix all muffin ingredients, minus the can of blueberries (feel free to save for something else or discard)
Fold in fresh blueberries
Add mix to greased muffin tin

Mix all streusel ingredients together
Use hands to work butter into dry ingredients
Add streusel to top of muffins, filling each one

Bake for 20-25min, for 12 regulars muffins
Bake for 30-35 min for 6 giant muffins
Use toothpick to make sure they are done. Toothpick should come out dry.
ENJOY!!

Took the weekend off to enjoy some family time. 🌻☀️

Not bad for an almost October harvest ☺️

Surprisingly we still have an insane amount of 🍆 growing/flowering.

Not much to do this weekend in the garden with all the rain we’re having.

Decided to take the recent tomatoes harvested and make some more sauce. This time I went with puréed tomato sauce, sans seasoning. Going to use in the next few days so kept it simple. 🍅🥫

Pro tip: Add frozen corn kernels to your boxed cornbread mix. Game. Changer! 🙌🏻

👦🏻Mommy, is this corn from your garden?
👩🏻No buddy. Mommy doesn’t grow corn.
👦🏻Can you grow some?
👩🏻Sure can!!
