This was heavenly… seared ahi tuna, white asparagus and crispy shallots. roasted garlic and truffle oil for the base. Plates were licked.

Tuna tataki ft. the cheap stuff from Aldi. Dig it.

Gawd this cabbage…. Seared in magnalitr, then roasted at 425 with miso/harissa butter. Served over whipped feta. Top 5 thing I’ve ever made.

Pan seared salmon with burrata stuffed beef steak, tomatoes, and spinach arugula pesto. 👌

Last night… ribeye over Japanese sweet potatoes with chorizo butter, and broccoli sprouts. Cast-iron over 700° big green egg for the sear.

Ahi crudo last week. Oh yea.

Snapper buerre blanc with jumbo lump crab, asparagus and beet sprouts for a friend that was traveling to BR last week. It took every ounce of self-control, not to lick my plate in front of our guests.

One of those lucky days where the tuna, avocado, and mango all looked perfect at the grocery store…

Daydreaming about this recent Lenten dinner… whipped ricotta, whole roasted eggplant, marinara with lemon zest, flaky salt, and a light dusting of oregano from my Aunt Beverly’s garden.
