Let's hear it for root vegetables: the unsung heroes of winter 🙌🧅🍠. This tasty, hearty hash is made with pantry staples like carrots, beets and sweet potatoes. Adding some eggs into the mix makes the whole dish a meal that's perfect any time of day 🍳🤌.

Root Veggie Hash
Makes 4 servings

INGREDIENTS
1 tablespoon olive oil
1 teaspoon paprika
2 cloves garlic, minced
1 shallot, sliced
1 teaspoon fresh thyme, minced
1 1/2 cups sweet potato, diced 1/2 inch thick
1 cup yukon gold potato, diced 1/2 inch thick
1 cup beets, diced 1/2 inch thick
1 cup carrots, diced 1/2 inch thick
1/4 cup water
4 Vital Farms Eggs
Salt & pepper to taste

INSTRUCTIONS
1. Heat a skillet on medium heat. Heat oil in the pan. Add paprika and let it sizzle for 15 seconds to bring out the flavor, then add garlic, shallot, and thyme. Sauté for 2-3 minutes until fragrant.
2. Add sweet potato, Yukon gold potato, beets, and carrots. Season with salt and pepper. Cook for 2-3 minutes. Then, add water and cover. Reduce heat to medium-low and steam for 10 minutes.
3. Remove cover and continue to cook until caramelized, 3-5 minutes
4. Make four wells in the hash and crack an egg into each. Re-cover and cook for 6-8 minutes, or until egg whites are set and yolks are cooked to your liking.
5. Garnish with fresh parsley; serve warm.

Little Nero's doesn't deliver in your area? 🍕🎄 We've got ya covered with this lovely cheese pizza Kevin McCallister would approve of, with a few small improvements including homemade garlic butter brushed all over the crust 🤤🧄🧈 Make your own using the recipe below ⬇️

Home Alone Cheese Pizza

Makes 1 12-inch pizza

INGREDIENTS
4 tablespoons Vital Farms Sea Salted Butter
1 clove garlic, finely grated
1 teaspoon fresh oregano, finely chopped, plus more for sprinkling on top
16 ounces store-bought pizza dough
1/3 cup store-bought pizza sauce
8 ounces Italian blend cheese (or a mix of mozzarella, fontina, provolone, and Parmesan), shredded

INSTRUCTIONS
1. Place a 12-inch or larger cast-iron skillet in the oven on the middle rack and preheat oven to 500°F or as high as your oven will go.
2. In a small saucepan, combine the butter and garlic and heat over medium-low heat until butter is melted and garlic is fragrant.
3. Remove from heat and stir in oregano then set aside.
4. On a piece of parchment paper, stretch the dough out to about a 12-inch round, leaving a 1-inch lip around the edge for the crust.
5. Brush the garlic butter generously all over the dough, including the crust.
6. Spread a thin, even layer of the pizza sauce all over the bottom of the pizza.
7. Sprinkle the cheese mixture evenly over the pizza sauce and sprinkle reserved oregano on top.
8. Remove the pre-heated skillet from the oven and carefully lay the pizza into the pan, using the parchment. Bake for about 12-15 minutes, until crust is puffed and golden and the cheese is golden-brown and bubbling.
9. Cool for a few minutes, brush the crust with the remaining garlic butter, slice up and serve.

Ok – you had us at jammy egg 🍳😍 This flatbread is easy-to-make and decadent-to-eat ✨ Get the recipe ⬇️

Brie and Cider-Caramelized Onion Flatbread
Makes two 8-inch flatbreads

INGREDIENTS
16 ounces store-bought pizza dough
4 tablespoons Vital Farms Unsalted Butter
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 teaspoons fresh thyme leaves
2 large white or yellow onions, thinly sliced
2/3 cup apple cider
8 ounces brie cheese, thinly sliced
4 Vital Farms Eggs

INSTRUCTIONS
1. In a large skillet over medium heat, add the butter and olive oil. Once butter has melted, add in the onions.
2. Add the salt, pepper and 1 1/2 teaspoons of the thyme and stir to combine. Continue to cook the onions, stirring occasionally until onions are broken down and have started to brown, about 20 minutes.
3. Add the cider and turn the heat down to low. Allow the cider to reduce until completely evaporated, about 8-10 minutes. Set aside.
4. Preheat the oven to 500°F. Line a rimmed baking sheet with parchment paper.
5. Divide the dough in half and stretch each to a rough oblong shape about 8 inches in length by 3-4 inches wide. Add each to the baking sheet with some space between.
6. Spread half of the onion mixture on each flatbread, spreading evenly.
7. Top each flatbread with half the brie, spreading out evenly. Sprinkle each with the remaining 1/2 teaspoon of thyme.
8. Bake for about 5 minutes, until dough is just set.
9. Crack two eggs on each flatbread and season each with salt. Bake for about 10 more minutes, until flatbread is puffed and golden and whites are just set on flatbread. Slice up and enjoy warm.

Who's ready for pie season? 🥧 With its rich, buttery crust, tender apples and heart oat topping, this Caramelized Honey Apple Crumble Pie will please both pie and crumble lovers alike 🍎🌟 Bake this dessert for your holiday table and 🔔 ding ding ding 🔔 you'll have a winner!

Makes One 9-inch pie

INGREDIENTS
Dough:
1 Vital Farms egg yolk
1 teaspoon apple cider vinegar
2-4 tablespoons ice water
1 1/3 cup all-purpose flour
1/2 teaspoon salt
1/2 cup Vital Farms Unsalted Butter, cold and cut into ½-inch cubes

Filling:
¾ cup honey
2 pounds (about 5-6) firm apples, such as granny smith or honey crisp or a mix, peeled and thinly sliced
2 teaspoons ground cinnamon
3 tablespoons cornstarch
pinch of salt

Topping:
1 cup all-purpose flour
1/2 cup old fashioned rolled oats
1/2 cup light brown sugar
1/2 teaspoon salt
1/2 cup Vital Farms Unsalted Butter, cold and cut into ½-inch cubes

INSTRUCTIONS
1. Start by making the dough. Mix the egg yolk, vinegar, and 2 tablespoons of the ice water in a small bowl and set aside.
2. In a large bowl, whisk the flour and salt together then add in the butter and toss to coat in the flour. Pinch the butter into the flour with your hands, making flat shards of butter.
3. Add the egg yolk mixture into the flour mixture and toss to incorporate. Add the remaining two tablespoons of ice water as needed just to bring the dough together.
4. Press the dough into a flat disc about an inch thick, wrap in plastic wrap, and refrigerate at least two hours.
5. In a saucepan, cook the honey over medium-low heat, swirling the pan until it starts to gently bubble. Continue cooking until color is a deep amber and smells toasty, around 3-5 minutes. Remove from heat and let cool completely.
6. In a large bowl, combine the apples, honey, cinnamon, cornstarch, and salt.
7. Make the crumble mixture by mixing together the flour, oats, brown sugar and salt in a medium bowl. Add the butter and gently squeeze it into the flour mixture with your hands to create clumps until the butter is completely incorporated into the flour mixture. Set aside.
8. On a generously floured surface, roll the dough out to about a 1/4-inch thick round 12 inches in diameter. Transfer to a 9-inch pie plate. Fold under the excess dough hanging over the sides and crimp the edges.
9. Pour the apple mixture into the pie pan and spread in an even layer.
10. Sprinkle the crumble topping over the apples in an even layer. Place pie in the freezer for 30 minutes to chill.
11. Meanwhile, preheat the oven to 425°F. Line a rimmed baking sheet with foil and place pie in the center and bake for 20 minutes then turn temperature down to 400°F and bake for another 30-35 minutes, until the juice are bubbling and the crust and topping are deep golden brown. Allow to cool before slicing.
