Power Bowl Monday!
Start your week off right, folks!
I prepped all of these ingredients (and much more) over the weekend, so theres little room for error. Working from home sure makes it easy to sneak off to the kitchen for a snack, so I do my best to only have healthy options available that will fuel my body.
(Drizzle veggies with EVOO and sprinkle with salt and pepper before roasting or grilling).
-Roasted Sweet Potatoes, cubed
-Roasted Red Bell Pepper, sliced
-English Cucumber, sliced
- organic black beans
-sweet organic corn, grilled
-avocado,sliced
I whip up 1/2 an avocado with 1/4 Greek yogurt, 1tbsp fresh lime juice, 1 clove of garlic and a pinch of salt & pepper. Once blended together I drizzle on-top of my assembled veggies a dive in! Feel free to add any protein you like to this dish for some added punch 🥊
Lunch is served!

Any opportunity I have to roast garlic, IM IN!
Not only does garlic provide powerful health benefits, it also makes your home smell great! I roast 2 -3 heads of garlic (cut 1/4” from the top) in a 400° oven. I drizzle the exposed garlic with olive oil then wrap in foil. Once placed in oven, I roast for about 40 minutes.
I add 6 garlic cloves to my favorite hummus recipe and blend until silky smooth. Once plated, I place more roasted garlic on top (obviously 😋) drizzle EVOO, sprinkle with smoked paprika and Cayenne pepper. Yum!

•Loaded Cauliflower Soup•
Has half of the fat/ carbs as it’s rival (loaded baked potato soup) and serves up 10gr of protein with 4gr of fiber! Fill up without feeling bloated!

½ cup chopped yellow onion
½ cup chopped celery
4 garlic cloves, minced
8 cups chopped cauliflower
3 cups low sodium chicken broth
1/2 tsp salt
1/2 tsp cracked black pepper
3/4 cup unsweetened almond milk
1/2 cup shredded sharp cheddar cheese
In a Dutch oven heat 1 Tbsp of Evoo on medium-high
Add the chopped onion, celery, and garlic to the pan and cook, stirring frequently, until become tender (5ish min). Add chopped cauliflower, the chicken broth, salt, pepper. Bring the broth to a boil; cover and reduce the heat to medium-low and simmer until the cauliflower is completely tender 13-15 min.
Let the mixture cool slightly then carefully pour it into a blender. Add almond milk. Attach the blender lid on top,( make sure to remove the center piece of lid so steam can escape). Cover that center opening with a towel and process the soup mixture on low until completely smooth. Pour the smooth soup back into the Dutch oven on the stovetop and set it over medium heat to let it warm through. Taste and adjust seasonings, adding more salt and pepper, if needed.
I Crumbled a bit of bacon, sliced scallions & cheese on top and served while piping hot! YUM!

Looking for a “guilt free” snack for Game/Fight night? Well, look no further!
Air Fryer Sweet & Spicy Korean Chicken Wings
1 ½ lbs chicken wings (party wings)
2 Tbsp rice vinegar
1 Tbsp low sodium soy sauce
2 Tbsp minced fresh ginger
¾ tsp kosher salt
½ tsp freshly ground black pepper
2 large egg whites , beaten
1 cup arrowroot (sub cornstarch)
FOR THE SAUCE
3 Tbsp ketchup
3 Tbsp Sriracha (sub gochujang)
3 Tbsp honey
2 Tbsp low sodium soy sauce
1 Tbsp sesame oil
3 garlic cloves, minced
scallions, thinly sliced
*
In a medium bowl, combine the chicken, vinegar, soy sauce, ginger, salt, and pepper and tos to coat the chicken. Let marinate for 30 minutes (overnight is best)
Beat the egg whites in a shallow bowl.
Put the arrowroot in a separate shallow bowl.
Dip the chicken pieces first in the egg and then the arrowroot to coat. Arrange the coated chicken pieces in the air fryer. Don't overcrowd. Do in batches if necessary.
Once all of the chicken is coated spray air fryer with cooking spray and arranged in basket , spritz chicken with a bit of cooking oil.
Air fry the chicken at 390ºF for 8 minutes. Turn the chicken pieces over, spritz or brush with a bit more oil, and then cook for another 7 minutes at 390ºF.
While the chicken is cooking, make the sauce. In a small bowl, stir together the ketchup, sriracha, honey, soy sauce, sesame oil, and garlic until well combined.
When the chicken is finished air frying, transfer it to a medium bowl and toss with the sauce. Garnish with scallions, & ENJOY!

🌶 Spicy Honey Garlic Chicken Thighs🌶.

Combine 3 cloves of minced garlic, 1 Tbsp low sodium soy sauce, 1/4 C honey, 2 tbsp lime juice, 1/2 tsp salt and 1/2 tsp black pepper in a bowl. Mix well & set aside.
Sprinkle 6-8 chicken thighs with s/p.
In a large non-stick skillet over medium-high heat, add 1 tbsp of avocado oil. Once the skillet is hot, add the chicken thighs.
*Don’t overcrowd the pan, the chicken will steam.*
Cook the chicken until browned on both sides, 4 min per side. Reduce the heat to medium and add the sauce and cook the chicken, turning and stirring occasionally, until cooked through 8-9 min. The sauce will thicken and caramelize (YUM).
Plate chicken & sprinkle with red pepper flakes, cilantro and a fresh squeeze of lime.

[08/31/20]   Smoked Salmon Summer Salad.
How pretty is this? It tastes even better!
This can be tossed together and ready to eat in 10min! In a serving bowl place;
•washed lettuce of choice.
•smoked salmon.
•thinly sliced apple (Granny Smith is preferred).
•1 zucchini/squash sliced into ribbons.
•1/3 red onion, thinly sliced.
•1/2 a cucumber, sliced.
For the dressing;
•1/4 C Greek yogurt, 1tbsp whole grain mustard, 1tbsp white vinegar, s/p to taste.
-Drizzle the salad lightly with dressing and sprinkle a bit of fresh dill. Serve immediately & enjoy!

• Simply grill marinated skirt steak to desired temp. Let’s rest for 10 min and slice against the grain.

Roasted Garlic & Asparagus Soup!

This Texas weather has me craving a delicious and healthy soup! Make it, eat it, freeze it... this soup is silky smooth and satisfying! .
•2 lbs of roasted asparagus.
•8-10 cloves of roasted garlic.
•3.5 cups vegetable broth.
•1 cup of half & half OR (Vegan opt) 2 15oz cans of white beans (rinsed).
•salt, pepper and chopped parsley.
•2 tbsp EVOO.
In a blender, add broth and half & half (or beans), asparagus, garlic and S/P to taste. You may have to do this in batches depending on blender size.
•blend until smooth.
• transfer to soup pot and warm on medium heat. •ladle into bowls and garnish with EVOO, parley, croutons and/or cheddar cheese.
Serve and enjoy! .

This morning’s breakfast is brought to you by a comforting favorite & what I could grab at the market! A simple twist on a classic, Lox & eggs breakfast toast.
-start by toasting a hearty bread. -spread a thin cream cheese.
-layer on slices of the smoked salmon & avocado.
-next place egg,“sunny side up”.
-top with thinly sliced red onion, micro greens & capers.

I was able to toss together a few grocery store finds & it turned out, fantastic!
Teriyaki ginger, turkey meatballs on shaved brussel sprouts and sticky rice👌.

.
1lb of ground turkey.
2 green onions, diced.
1 tbsp grated ginger.
2 cloves of garlic, diced.
1 lb of brussel sprouts, shaved.
2 tbsp of sesame oil, EVOO is fine too.
1/2 C soy sauce, (low sodium).
1/3 C orange juice.
3 tbsp of honey.
2 tbsp ACV.
1 tsp red pepper flakes.
1tsp black pepper.
Steamed rice.

Preheat oven to 450°. Line a baking sheet. In a bowl, mix together turkey, 1/2 green onion, ginger, garlic & pepper. Roll the meat into tbsp size balls, and place on baking sheet. Bake for 15-20 min. You can bake the shaved sprouts for 15 min or steam them if you prefer. In a sauce pan combine the oil, soy sauce, orange juice, honey, vinegar and red pepper flakes. On medium heat green mixture to a boil and allow to reduce and thicken. Pour 1/2 sauce over meatballs & return to oven for 3-4 min.
Plate rice, sprouts then meatball and drizzle remaining sauce on top. Garnish with green onion and sesame seeds.
Enjoy!
