Spring rains that are followed by the summer heat create a climate the Eastern doctors refer to as Damp-Heat.

Damp-heat in our atmosphere can manifest in our bodies as infections, heat exhaustion, high blood pressure, lower body edema, diarrhea, painful urination, stomach ulcers, inflamed skin outbreaks such as eczema or acne, extreme thirst, and even emotional restlessness and/or impatience.

Here is a Damp-Heat Protocol to get you through the spring-to-summer transition!!!!
Daily Beverage: Homemade Lemonade πŸ‹ (lemons, water, agave)

Daily Herbal tea: Dandelion

Mung Bean Rice: 4 servings
1) soak 1 cup of mung beans in warm H2O (cold H2O will take longer) for 2 hrs, just cover mung beans with water.
2) Mix 1.5 cups of Basmati rice with soaked mung beans
And add about 3cups of H2O. Add Salt and pepper to taste.
3) Bring to a boil, cover with a tight fitting lid, and reduce heat to Simmer on Low. Do not lift lid during the 15min cook time, steam cooks rice!
4) Fluff rice with 1 TBSP of grass fed ghee. Stir really good and make sure all water has cooled off and rice is not crunchy. Return lid if you need to steam a little longer!

Mung Bean Sprout stir fry:
-1 -2 TBSP avocado oil
-salt and pepper to taste
-2-3 carrots, thinly sliced, or 2 cups shredded
-3-4 stalks of celery, sliced at a slight angle
-2 cups of butternut squash cubed
-4-5 stalks of asparagus, sliced at an angle
-1 bag of mung bean sprouts

GF Stir Fry Sauce:
-2 inch piece of ginger, grated or finely minced
-2 cloves of garlic, grated or finely minced -1/2 cup GF Tamari Sauce
-1/2 cup chicken or vegetable stock -1 TBSP arrow root
-1 TBSP agave nectar -1 tsp sesame seed oil -1 tsp rice vinegar
Combine all ingredients and whisk to combine. Set aside and add to veggies after they are tender, simmer to thicken.

I am seeing lots of spring onions, mushrooms, green beans, and radishes at the farmers market these days. Here is a yummy GF stir fry recipe that utilizes all of these goodies!! Feel free to modify based on what you find at your local farmers market!!! The secret to a great stir fry is the sauce anyways πŸ˜‰πŸ²πŸ˜‹
Stir Fry Ingredients serving 4

-1-2 TBSP avocado oil
-Salt + Pepper to taste
-1 medium spring onion, cut into 1 inch pieces
-10 radishes, sliced in half moons
-8-12 mushrooms, cut in halves or quartered
-1 lb snap peas
-4-6 stalks of asparagus, cut into 1 inch pieces
-2 TBSP sesame seeds
-1 lb. shrimp or chicken, bite sized pieces (optional)
-1.5 cups basmati rice, can sub cauliflower rice if needed
GF Stir Fry Sauce:
-2 inch piece of ginger, grated or finely minced
-2 cloves of garlic, grated or finely minced
-1/2 cup GF Tamari Sauce
-1/2 cup chicken or vegetable stock
-1 TBSP arrow root
-1 TBSP agave nectar
-1 tsp sesame seed oil
-1 tsp rice vinegar
Combine all ingredients and whisk to combine. Set aside.

Stir Fry:

1. Heat a large skillet over medium high heat. Add avocado oil, the meat if you are using for recipe, and a pinch of salt. Cook until either chicken is golden brownish or the shrimp curls, about 3-5 min, stirring occasionally. Transfer to a large mixing bowl.

2. In the same pan add a little more avocado oil if needed and add veggies with a pinch of salt and pepper to taste, sautΓ© to desired firmness

3. Add meat if using back to pan with veggies with 1 cup of the stir fry sauce, cook for another 2-3 min to reheat all ingredients and allow sauce to thicken, stirring as it heats to make sure all ingredients are coated evenly with sauce

4. Top with Sesame Seeds and serve with basmati or cauliflower rice!! YumπŸ˜‹

There are a few more cold nights left before Spring sets in, which means perfect soup weather!! Try this Creamy Potato-Asparagus Soup, inspired by Eating Well, is dairy free, vegetarian and gluten free!!!

Total: 30 mins
Servings: 4
β€’1 TBSP Avocado πŸ₯‘ oil plus 1 1/2 TBSP, divided

β€’1 medium shallot, chopped

β€’3 cups low-sodium vegetable broth or chicken broth, or bone broth for added protein and nutrients

β€’1 pound asparagus, trimmed and cut into 1-inch pieces

β€’1 cup diced peeled potato

β€’2 tsp prepared horseradish, or to taste

β€’ΒΌ tsp salt

β€’1 cup whole-wheat country bread cubes (1/4 inch), or Gluten free bread, or omit completely, it will still be good!

β€’Sliced scallion greens for garnish

Step 1
Heat 1 tablespoon oil in a large saucepan over medium heat. Add shallot and cook, stirring, until softened, 2 to 3 minutes. Add broth, asparagus, potato, horseradish and salt; bring to a boil. Reduce heat and simmer until the vegetables are tender, about 15 minutes. Puree with an immersion blender/vitamex or in a regular blender. (Use caution when pureeing hot liquids.)

Step 2
Meanwhile, heat the remaining 1 1/2 tablespoons oil in a large skillet over medium-high heat. Reduce heat to medium, add bread cubes and cook, stirring, until browned and crispy, 3 to 5 minutes. (Skip step if you don’t want the added carbs)

Step 3
Serve the soup topped with the croutons and scallions, if desired.

Be your own Valentine tomorrow and treat yourself to a lovely, delicious, yet healthy breakfast smoothie inspired by Jessica Gavin!!

Chocolate Covered Strawberry Smoothie
Prep Time: 5 mins
Total Time: 5 mins

β€’1/2 cup dark chocolate chips, (60% cacao recommended)
β€’4 whole organic strawberries, (for dipping)
β€’2 cups organic strawberries, frozen
β€’1 medium banana, sliced
β€’1/4 cup almonds or cashews, whole
β€’5 teaspoons unsweetened cocoa powder, or Viva Labs cacao powder, even raw cacao nibs if you want some texture to the smoothie
β€’1 tablespoon flaxseed, ground
β€’1 cup unsweetened almond milk, or dairy free milk
β€’ 1 tablespoon pure grade B maple syrup, or manukau honey
β€’1/2 cup vanilla greek yogurt, (optional)

β€’Add chocolate chips to a small microwave-safe bowl.
Heat in 30-second increments, stirring in between until chocolate is completely melted.
β€’Dip strawberries in chocolate and allow to dry on a parchment paper lined sheet pan.
β€’Add all other ingredients into a blender.
β€’Blend for about 30 to 60 seconds until the mixture is smooth.
β€’Add more or less sweetener as needed
β€’Add more dairy free milk as needed to thin smoothie consistency.
β€’Top with some Greek yogurt, a sprinkle of cocoa powder and strawberries.

β€’Smoothie recipe yields 3 cups.
β€’If you don't have frozen strawberries add fresh strawberries plus 1 cup ice cubes. Add more ice as needed.
β€’If you like a stronger cocoa flavor at 2 tablespoons cocoa powder/cacao nibs

Don’t let stuffing and pies weigh you down this Holiday season!! Try adding a lighter side to your holiday feast!

β€’3 tablespoons avocado oil
β€’2 tablespoons whole-grain mustard
β€’1 tablespoon chopped fresh thyme
β€’1 tablespoon apple cider vinegar, divided
β€’3/4 teaspoon kosher salt β€’1/2 teaspoon freshly ground black pepper
β€’1 pound peeled cubed butternut squash (about 3 cups)
β€’1 pound parsnips, peeled and cut into 1-in. pieces (about 2 1/4 cups)
β€’1 pound Brussels sprouts, trimmed and halved
β€’8 ounces small Yukon Gold potatoes, halved
β€’Cooking spray (I use avocado oil πŸ₯‘ spray)
Step by Step:

Step 1
Preheat oven to 450Β°F.

Step 2
Combine oil, mustard, thyme, 2 teaspoons vinegar, salt, and pepper in a bowl, stirring with a whisk. Combine butternut squash, parsnips, Brussels sprouts, and potatoes in a large bowl. Add mustard mixture to squash mixture; toss to coat.

Step 3
Spread vegetable mixture in a single layer on a foil-lined baking sheet coated with cooking spray. Bake at 450Β°F for 35 minutes or until browned and tender, stirring gently with a spatula after 25 minutes. Remove pan from oven. Drizzle with remaining 1 teaspoon vinegar; toss.

Step 4
Variation: Lemon-Herb Sheet Pan Roasted Vegetables

Step 5
Combine 3 tablespoons olive oil, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper in a bowl, stirring with a whisk. Combine butternut squash, parsnips, Brussels sprouts, and potatoes from above recipe in a large bowl. Add oil mixture, 10 peeled garlic cloves, and 1/2 thinly sliced lemon to vegetables; toss to coat. Bake as directed in step 3 of above recipe. Remove pan from oven; sprinkle vegetables with 1 cup fresh flat-leaf parsley leaves, 1/3 cup chopped fresh chives, 1/4 cup chopped fresh dill, 1/2 teaspoon lemon zest strips, and 1 tablespoon fresh lemon juice; toss.

Step 6
SERVES 10 (serving size: about 2/3 cup)
