🍲 Warm up with this Creamy Parmesan Italian Sausage Ditalini Soup! It’s rich, cozy, and packed with delicious flavors perfect for a chilly night. 🧀💛
Ingredients:
1 lb Italian sausage, casings removed
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
4 cups chicken broth
1 cup heavy cream
1 cup small pasta (ditalini or elbow)
1 cup shredded Parmesan cheese
1/2 tsp dried basil
1/2 tsp dried oregano
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Cook the Sausage:
Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up as it cooks until it is browned. Remove the sausage from the pot and set it aside.
Sauté the Aromatics:
In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent, about 3–4 minutes.
Add Tomatoes and Broth:
Stir in the drained diced tomatoes, chicken broth, dried basil, and dried oregano. Bring the mixture to a boil.
Cook the Pasta:
Add the pasta to the boiling broth mixture and cook until it is al dente, approximately 8–10 minutes.
Make it Creamy:
Reduce the heat to medium-low. Stir in the heavy cream and shredded Parmesan cheese, allowing the cheese to melt and thicken the soup.
Add Sausage Back In:
Return the cooked sausage to the pot, stirring to combine with the soup. Season with salt and pepper to taste.
Serve:
Ladle the soup into bowls, garnish with freshly chopped parsley, and enjoy this hearty Italian-inspired meal!

Was feeling something warm and cozy today for dinner. And for me and my family it’s soup. So I made one of our favorites yummy yummy yummy.
Here is my quick recipe cooks in 45 minutes.
8 oz of thick cut bacon
1 pound spicy Italian ground sausage - use mild for kid-friendly
4 tablespoons butter
1 white onion - diced
1 tablespoon minced garlic
6 cups chicken broth
2 cups water
4-5 yellow potatoes - cut into 1-inch pieces
3 teaspoons salt - or to taste
1 teaspoon black pepper
1 teaspoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon onion powder
Fresh chopped parsley
Fresh chopped basil
2 cups heavy cream
4 cups chopped kale
chopped bacon or bacon bits and grated parmesan cheese for topping - optional

Japanese Tonkatsu
The kids and I love to travel around the world in our kitchen. So todays stop was to Japan.
INGREDIENTS:
4 (1/2-inch thick) boneless pork chops
2 tablespoons all-purpose or rice flour
1 egg, beaten
1/2 cup panko (Japanese style bread crumbs)
Vegetable oil
Tonkatsu sauce
Unsalted butter: Some recipes use milk to make it creamy, but I use more butter than flour to make it taste decadent.
All-purpose flour
Water
Ketchup: Adds a tangy sweetness.
Worcestershire sauce
Oyster sauce
Soy sauce
Light brown sugar
Kosher salt
Lemon juice: A final squeeze at the end balances everything so it’s well-rounded.
