These knives have seriously blown my expectations. Incredibly thin, light, and RAZOR sharp. Every detail is different per each knife due to being hand made. It’s like each knife has its own personality and characteristics. From the different colors (red/blue/green) in the kurouchi (black on the blade) from the type of anthracite (coal) used during forging to the individual hammer strikes. These knives are FULL of surprises and in allllll for it.

🚨TAKAYUKI IWAI KNIVES HAVE ARRIVED 🚨
Directly from the hammers of Takeshi Iwai (mastersmith) out of Echizen city, Japan. These hand forged knives absolutely scream “traditional Japanese forged”. The thick necks, beautiful forged distal tapers, and unreal quality. All four knives are Sanmai construction (3 layers) Iron clad (outter layer) with a Aogami 2 (blue 2 steel).
Gyuto 210mm - $240

Nakiri 165mm - $200
All the knives come handled with a gorgeous black pakkawood (cap) and rosewood (body) D shaped wa handle.
There truly is something exquisite about hand forged knives. The color hues on the blades kurouchi (type of coal used during forging, the subtle differences in each knife, and to know what your holding came from another human beings heart and soul from 6-7,000 miles away. Makes these so much more than “just another chef knife.”
Takayuki Iwai knives will be trickling in all the year so stay tuned to see what comes next! 👍

*My time with the Tim Rowland Procut 8.25” Ktip gyuto*
Procut is a proprietary steel designed and made for (second to last slide gives you steel info)
Firstly I have to admit I’m a tad biased for a kitchen knife made by a career chef. With that being said this knife was an absolute PLEASURE to test. Tim Rowland of has taken his years of using high end knives in kitchens and totally put it in every knife he makes. I love using his knives because it fully encompasses “blade geometry over sharpeness”. Don’t get me wrong all of Tim’s Knives are super sharp, however over time and with use ANY kitchen knife edge will dull. The fun contrast to this is a knife with a perfect blade geometry will never feel like it dulls. Tim’s knives have this feel and so does this knife. I was a bit skeptical of Procut steel however it vastly exceeded my expectations and I would prefer this steel for a kitchen knife used commercially and residentially. Over all edge retention, corrosion resistance (sustainable and doesn’t run away to a rust), durability made this steel catch my eye. WELL DONE by the very skilled and knowledgeable guys over at POP’S KNIFE SUPPLIES.
This knife had been to 3 people before me and I used it for three weeks and it STILL did not need to be sharpened…. That’s about 8-9 weeks of use and still going strong.
All in all I would HIGHLY recommend people keep an eye out for kitchen knives made in Procut! If you’re in the market for a custom made piece that will last a life time I definitely suggest you look at https://www.rowlandcutlery.com/

Inspired home show 2025- Chicago- McCormick place… this marks the second year of the show for us. WOW! What an absolute incredible time! From Chinese food in China town with mainland Chinese people to meeting a local chef who is seriously on the rise ( ) the show played second fiddle to the food we were shown 🤤…. I never considered myself a foodie until this trip. Chef James is to thank for this discovery. The show itself was slower foot traffic wise however our booth was BUSY BUSY BUSY. Some of the days I didn’t even have time to sit down and it definitely felt more like a ATL. I can NOT wait until next year’s show! For everyone who came, visited the booth, and had discussions about chef knives. THANK YOU! We had an absolute blast meeting everyone and sharing our passion with you all! 🙌 Have a great day everyone and we’ll see you all at BLADE SHOW ATL 2025!!!!
