Antelope hunters- I'm doing the same special I do every year. $100 processing till regular archery season opens. If you can tag an antelope with a bow I think you've earned it 😉

I limit the amount of private events I accept to ensure each one can get my full attention. This is a super fun way for me to stay in the culinary loop and a great way for you to use some of the wild game you've been wondering how to cook. Red meat is obviously my specialty but I'm no stranger to fish and game birds as well.
An ideal group size is 6-10 people, preferably adventurous eaters 😉

I got some horrible news last night that a good customer (and friend) lost his house in the recent fires. Luckily he and his family were out of the area so they are all OK, but they lost everything.
Fleetwood is one of the nicest guys you'll ever meet and an avid hunter. He was one of my first customers years ago and I've been lucky enough to work with him on multiple occasions.
As I mentioned, he lost everything- I couldn't even imagine being put into his position. He humbly reached out to me asking if I knew any landowners in Unit 20 where he has a late season cow tag in order to help refill his meat supplies, but we all know that's not nearly enough to get someone back on their feet.
He said he lost rifles, bows, packs, and all of his other hunting equipment. Obviously he lost a lot more than that but being a game processor I figured thats where I could help the most....
I know my customers are some of the kindest people around and I told him I'd put the word out to see what I can do (again, he only asked for hunting permission but I'm not going to stop there).
I'll be giving him a freezer and whatever meat I can to help him get started and a rifle to use whenever he needs it but that's hardly anything. If any of you have any extra equipment or meat that you wouldn't mind parting with I know how much he would appreciate it. Everything helps.
If you are a landowner in unit 20 and wouldn't mind an elk hunter on your property that would also be amazing. I have gotten permission from a few but they have all said they haven't seen many elk lately.

Charcuterie board to start
Pheasant sausage w/ fig compote (supposed to represent a hidden pheasant in the brush)
Herb & dijon crusted venison loin with winter vegetables (sous vide in bear fat 😋)
German chocolate tart with cocoa nibs crumble
