Sweet and savory, this maple rutabaga soup is easy to make and the perfect dish for cold winter days! Photo and content by Produce Manager Christian.
Ingredients
• 1 tbsp butter
• 1 yellow onion, finely chopped
• 3 tbsp maple syrup
• 2 large rutabaga (or 3lbs), peeled and chopped into large cubes
• 3 cups chicken or vegetable broth
• 1 cup cream
• Salt and pepper to taste
• Ground nutmeg to garnish
• Sour Cream to garnish
Directions
1. Melt the butter in a large pot over medium heat.
2. Add the onions, rutabaga, and maple syrup and cook, stirring occasionally, until the onions become translucent.
3. Add the chicken or vegetable broth and bring to a boil. Simmer for 30 minutes or until the rutabaga is cooked through and soft.
4. Add the cream, then puree in a blender or food processor.
5. Return the soup to the pot. Add salt and pepper to taste.
6. Serve with a garnish of a dollop of sour cream and a dusting of ground nutmeg.

Jackie Robinson was the first African American to play in Major League Baseball in the modern era when he was signed by the Brooklyn Dodgers. Local Producer Spotlight: Ivan Sultan is the owner and operator at the Columbia Bar, LLC. When he is not outside enjoying a hike or paddling session, he is in the kitchen preparing the delicious snacks The Columbia Energy Bar is best known for. "This mushroom variety - so named because of its resemblance to a hen perched on a nest - has a meaty texture and a savory, earthy flavor with a peppery finish. They taste best when cooked, and can be easily roasted or sautéed. They also dry well, and can be pickled, too!"
