We received a smoked sockeye salmon package as a Christmas gift and it says best by Oct 2020! We called and all the girl said was "it's fine, you're fine' the label is wrong' THIS is unacceptable. I am not taking the chance of eating expired fish, and the company should make it right.

Terry Weidemier stopped by to visit the smokehouse on Friday July 24th. Terry manages 7 Feather's Truck and Travel located at 130 Creekside Drive, Canyonville, Oregon.
He has been our best Josephson's Salmon Jerky customer in Southern Oregon for many years. A good place to pickup some of our jerky.

I was able to show Terry Grandpa Anton's old fashioned smokehouse and explain how we transitioned to our Enviro-Pak smokehouse to make our shelf stable jerky. No refrigeration and a shelf life of six months

Smoking Scallops.....

These will be coming out of the smoker in a short while. They just got up to the cooking temperature of 150 degrees. Now we must hold them at that temp. for 30 min. Whole scallops are 6-10 inches wide and resemble the Shell Gas logo. The adductor muscle is the part that we smoke. These are from the Atlantic Coast where the Sea Scallop population is very strong.

Laying Out Jerky....
With dozens of Jerky customers all over the U.S. we must smoke about 100lbs of Salmon Jerky a week. Ths jerky in the photo is our Original jerky. It has already been cured for 3 days and cold smoked for 36 hours. The strips you see have been cut with our slicers. The strips will now hot-smoke for about 3 1/2 hours.

We just got about 1000 cans back from our micro-cannery in Warrenton. Many thanks to the Coast Guard who came in and bought 4 cases as we were labeling.

Fresh Caught Columbia Chinook Just Arrived!!

These were caught in Youngs Bay early this morning. If the fish biz we call these "Rouges" because they are hatchery fish and the eggs were from Rouge River Salmon. (Confused yet?!) Once the tiny... salmon grow to about 2 inches, one of the fins is clipped and they are released to the ocean. After 3-5 years they come back to the area they were released from.
