A different twist on traditional chicken salad!
Greek Chicken Salad
Ingredients:
Salad:
4 (1 lb) chicken breast halves – shredded or chopped
1 avocado – diced
½ red onion – thinly sliced
½ cup kalamata olives – pitted and quartered
6 oz. jar (oil packed) sun dried tomatoes – drained & sliced
1/3 cup crumbled feta cheese
¼ cup pine nuts

Dressing:
1/3 cup olive oil
½ cup Greek yogurt – plain & 0% fat
¼ cup reduced fat mayo
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder
1 tsp dried dill or ¼ cup fresh dill – chopped
1 Tbls white wine vinegar
Juice of 1 lemon

Directions:
Combine all dressing ingredients. Whisk well and set aside.
Combine all salad ingredients in large bowl. Pour dressing over the top and toss well to combine. If preparing in advance, add avocado just prior to serving.

Makes 8 servings

Cucumbers are the perfect addition to almost any protein!
Cucumber Dill Salad
Ingredients
2 medium cucumbers
1 cup reduced fat sour cream
2 Tbls finely diced yellow onion
2 tsp fresh chopped dill
1 Tbls cider vinegar
Salt & pepper

Directions:
Peel cucumbers. Slice off ends and discard. Slice in half lengthwise and again into half-moon slices.
Combine sour cream, diced onion, dill and cider vinegar in large bowl. Add cucumbers and toss to coat. Add salt & pepper to taste.
Refrigerate for 30 minutes to allow flavors to blend. Serve ice cold and garnish with fresh dill.

Makes 4 servings

Firecracker Salmon
Ingedients:
8 (4 ounce) fillets salmon
1/2 cup peanut oil
4 tablespoons soy sauce
4 tablespoons balsamic vinegar
4 tablespoons green onions, chopped
3 teaspoons brown sugar
2 cloves garlic, minced
1 1/2 teaspoons ground ginger
2 teaspoons crushed red pepper flakes
1 teaspoon sesame oil
1/2 teaspoon salt

Directions:
-Place salmon filets in a medium, nonporous glass dish. In a separate medium bowl, combine the peanut oil, soy sauce, vinegar, green onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil and salt.
-Whisk together well, and pour over the fish. Cover and marinate the fish in the refrigerator for 4 to 6 hours.
-Prepare an outdoor grill with coals about 5 inches from the grate, and lightly oil the grate.
-Grill the fillets 5 inches from coals for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes with a fork. Turn over halfway through cooking.

Antipasto Kabobs
2 jars of marinated artichoke hearts - quartered
1 large can pitted black olives
1 jar green olives
1 large container of marinated mozzarella balls
1 jar roasted red peppers, sliced in to chunks
30 slices of salami, cut in half
60 pieces of pepperoni
60 6” skewers

These can be stacked in any order and poked into a cantaloupe cut in half and placed flat side onto a plat or just piled on a pretty platter! Easy & fun.

Nutritional Info (per kabob): Makes 60 Calories 90, Protein 9g, Eff. Carbs 3g, Fat 4g
