It’s a Soup kinda day!! Rainy & Chilly...Hello Autumn and hello to Soup Saturday! Rosemary Roasted Butternut Squash Soup 🍂1 large butternut squash, roasted OR Take the shortcut and buy cubed butternut squash and toss in olive oil and your choice of spices. I used: pumpkin spice and Trader Joe’s Coffee BBQ Rub...makes for a delicious mix of spices! In a crockpot add the following: 🍂Roasted Butternut Squash 🍂1 Can Unsweetened Coconut Milk 🍂3 Cups Water 🍂1/2 Cup Apple Cider 🍂4 Carrots, chopped 🍂3 Celery stalks, chopped 🍂Leaves of 5 Rosemary Sprigs 🍂Handful of Sage Leaves 🍂More of the spices you used to roast the butternut squash 🍂Add onion and garlic for flavor (I can’t have either so I don’t add) 🍂I add 2 drops of doTerra Rosemary Essential Oil Let simmer on low all day or according to your crock pot directions for the time you have. Use a hand blender or a Vitamix to blend all together until creamy. Your home will smell like Autumn! Delish! Enjoy with warm bread or a delicious grilled cheese sandwich.
