Oh Christmas Tree, Oh Christmas Tree, how tasty tasty you are…
Serves 30
For the Christmas Tree Cookies
¾ cup plus 1 Tablespoon Vanilla Protein Powder
¼ cup plus 1 Tablespoon coconut flour
⅓ cup granular Swerve
¼ teaspoon sea salt
¼ teaspoon baking soda
½ cup raw cashews, soaked in water for 10 minutes and drained
¼ cup almond milk
1 egg white
½ teaspoon vanilla extract
.
For the Frosting
2 tablespoons coconut oil
1 tablespoon Lemon Lime Drop EVERYDAY FIT
¼ cup Frosted Vanilla Cake Protein Powder
¼ cup Swerve Confectioners Style
1 tablespoon arrowroot starch
2 tablespoons almond milk
**Optional: green sprinkles

Directions
1 Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
2 In a mixing bowl combine the dry cookie ingredients: protein powder, coconut flour, granulated swerve, salt and baking soda. Mix to combine.
3 In a food processor combine the cashews and almond milk until smooth. Add the egg white and vanilla extract. Mix until smooth. Add the dry cookie ingredients and mix well.
4 Sprinkle a piece of parchment paper with coconut flour. Place the dough on the parchment paper and sprinkle the top of the dough with coconut flour. Place another piece of parchment paper over the dough and use a rolling pin to roll the dough out to ¼ inch thickness. Use a tree cookie cutter to create 30 tree cookies. Transfer the cookies using a metal spatula to one of the prepared baking sheets
5 Bake in the preheated oven for 7 minutes. Allow the cookies to cool before transferring to a wire cooling rack.
6 Whisk the icing ingredients together until smooth. Spread icing over the cooled cookies and top with green sprinkles. Enjoy!

Is there anything cozier than a warm, frosting smothered cinnamon roll with a cup of hot coffee next to the Christmas tree on Christmas morning?
The ingredients in these Protein Cinnamon Rolls are healthful and beneficial for your fitness, your energy and your cheerful mood :)

We recommend making the cinnamon rolls the night before (just don’t bake them yet) and then pop them in the oven in the morning and slather with frosting before serving. Yum! Merry Christmas xo

Serves 12
.
For the Cinnamon Rolls
1 cup Phormula-1 Vanilla Protein
½ cup coconut flour
2 teaspoons baking powder
½ teaspoon sea salt
1 tablespoon coconut oil, melted
4 eggs
.
For the Cinnamon Filling
1 tablespoon ground cinnamon
¼ cup coconut sugar
1 tablespoon coconut oil, melted
.
For the Cream Cheese Frosting
½ cup cream cheese, at room temperature
½ cup Phormula-1 Vanilla Protein
¼ cup almond milk
¼ cup Swerve Confectioners Style
½ teaspoon vanilla extract
.
Directions
.
1 Preheat the oven to 350 degrees F. Grease a casserole pan with coconut oil or butter.
2 In a mixing bowl whisk the protein powder, coconut flour, baking powder and sea salt.
3 Mix in the melted coconut oil and eggs. Dough will be sticky. Use coconut flour on your hands and on the dough to reduce the stickiness as you form the cinnamon rolls in the next step.
4 Place parchment paper down on the counter or cutting board and cover with coconut flour. Transfer the dough to the parchment paper and sprinkle more coconut flour over the top. The entire surface of the dough should be dusted with coconut flour in order to prevent sticking. Cover the dough with another piece of parchment paper and use a rolling pin to flatten into a large rectangle.
5 In a small bowl combine the filling ingredients. Spread over the flattened dough. Roll the dough up into a log. Cut into 12 pieces and place in the casserole pan.
6 Bake for 15 minutes in the preheated oven until the edges are lightly golden.
7 Beat the frosting ingredients together until creamy. Spread over warm cinnamon rolls and enjoy with a hot cup of coffee. Store leftovers in the freezer and microwave for 20 seconds to re-warm. Enjoy!
