When I shared these lemonade cookies in my stories a couple weeks back I got a bunch of DMs looking for the recipe. Unfortunately for those people the recipe was still in my head. 😂 I managed to write it all down and take a couple of glamour shots along the way. The inspiration for these cookies was a large diet lemonade from Chick-fil-A. I wanted to see if I could replicate that sour/sweet combo. I added a healthy amount of lemon zest to the cookie dough and topped the cookies with a glaze flavored with lemon zest, juice and a dash of lemon extract.

Let me tell y'all a little secret {whispers}: I use frozen peaches in my pie. I know, I know! Fresh is best, but where in the world are we going to get fresh peaches in March? ⁠⁠

When baking with frozen peaches I don't let them thaw out and add a little extra cornstarch (or tapioca flour) to the filling to capture the extra water. This way I get to skip the peeling peaches part, which is quite frankly, the pitts 😂

Happy Saturday! On tap today - we have a couple of minor house projects - fingers crossed that we don’t make anything worse. 🤞🏾

I’m probably going to do some peloton yoga and then I need to replenish my chocolate chip cookie freezer stash.

Kicking off Black History Month with a slice of Edna Lewis' Caramel Cake. ⁠⁠

Edna Lewis's book The Taste of Country Cooking greatly influences how I think of myself as a baker. For whatever reason, it wasn't until I read her description on how to make a caramel cake that things just clicked. ⁠⁠
I was having so many issues with cakes sliding off themselves because I wasn't patient enough in the process. ⁠⁠

That time my brother dared me to make a cake without sugar. I obviously had to take things to the next level and make it a flourless cake too. ⁠⁠

I modified flourless chocolate cake recipe taking out all of the sugar (chocolate chips and granulated sugar). ⁠⁠
⁠⁠
I basically stood in the sugar section of the grocery store reading the packaging on every sugar alternative before buying Splenda's Allulose. The bag said it baked like sugar and it did not disappoint. ⁠⁠

Lily's Sugar Free Chocolate Chips were perfect to make that dreamy chocolate ganache topping. ⁠⁠

Happy New Year's Eve Y'all. This is my most popular post from 2021-- the Gingerbread Challenge, dethroning the Chocolate Chip Cookie⁠ Challenge. (I never thought anything would beat the CCC challenge!)⁠

This challenge- happened on a whim. All because someone asked me a simple and innocent question “do you have a favorite gingerbread recipe?” I focused on the word “favorite” and realized I had a lot of work to do before I could possibly declare a “favorite” recipe. ⁠

Y’all loved it and that Venn diagram. 🤣 I loved dancing around my kitchen making each batch of cookies - learning different techniques, noting which recipes amped up the spice and declarinf loudly “this dough is so nice!” ⁠

So for 2022 my baking goals are simple: bake all of the things. Bake on a whim. Bake when there are no cameras watching. Share all of the hilarious baking fails along with the baking triumphs. Enjoy every single moment - even all of the dirty dishes. ⁠

For the first time in forever my type A personality doesn’t have a list of things to check off and I’m kind of excited to see what insanity I come up with. Share your 2022 baking intentions in the comments.

So my daughter has decided that she wants to amend her Christmas List. It's this week. So when I asked her what she wanted instead, she said "All I want a White Christmas". LORD HELP ME. It was 70 degrees last weekend. No chance for a white Christmas in the foreseeable future. ⁠⁠

I'm strongly considering buying a bunch of foam and scattering it in my living room. Y'all talk me out this crazy idea!⁠⁠

Anyway-- for this month's challenge we had a split vote for the topic between Cookies and Cakes. And since I despise cake, cookies seemed like the way to go. These are my double chocolate peppermint cookies. Cocoa powder + chocolate chips; crushed peppermint & peppermint extract in the dough and a few more crushed candy canes for to make the whole thing festive. ⁠⁠
