Baking the Lincolnshire Plum Loaf dating back from 1834, by Mr. Slater Eyre from Lincolnshire county.

This bread has mixed fruits (prunes, raisins, golden raisins) and mixed spices. A bit similar to hot cross buns and Stollen, flavour wise.

This is a very soft loaf made with instant yeast. I wanted to see how I like it before committing to turning it to sourdough version. 😉

It is very lovely bread. I had it with English cheddar cheese as Jon had suggested. Interesting sweet and sharp savoury flavour. I’ll definitely turn it into sourdough loaf soon. 😙

I got up early as usual to prepare the sandwiches for offering to the monks.

I think I made over 2 loaves worth of sandwiches with a dozen eggs. The slowest steps was peeling the shells and cutting into triangles.

I was asking Le Monsieur if I have to make a sign telling people what is inside the sandwich, in case some people are allergic to dairy and stuff. He said it’s not necessary because monks don’t and can’t choose what they eat.

Then the teenager chipped in:

“Monks don’t choose, but MONK-keys choose!”

🤪

Well, cheeky monkey she is.

Sourdough Nama Shokupan again!

These will be made into Tamago Mayo Sando (Egg Mayonnaise Sandwich) for offering to the monks tomorrow.

If you go to the same temple, perhaps you get a chance to taste it too. Eieieieieiieeiie

They have a very lovely smell. This morning my kid opened the ziplock bag in which I keep the Nama Shokupan from Monday and I could smell it even from 5 feet away. I thought she had toasted it. She was about to slice for toasting. Amazing smell. You have to try it. ;)

Lovely morning everyone!

This is how I warm up the cold butter on a piece of warm toast. 😎

Honestly I find eating cold butter rather icky unless it is sandwiched with a luscious layer of kaya or red bean paste.

Simple soft scrambled eggs and organic salads to accompany the sourdough Nama Shokupan for a busy morning.

I always keep a bag of washed and spin dried salad leaves in the fridge. Makes me feel better to have green vegetables on hand. 😉

Testing the new mixer today with the ultimate Sourdough Nama Shokupan!

The mixer achieved the pumpkin state rather quickly, in half the usual time it would have taken in the old mixer. And the texture is so different! I cannot put a word to it yet. Let me use it more to be able to give a more detail comparisons.

What is Nama Shokupan? It’s 生食パン, or Raw Shokupan. It doesn’t mean it’s raw dough, oh no! It just mean that this type of shokupan can be eaten alone without toasting, without anything! Of course you can still make a delicious sandwich or toasties out of it! 😊

I like to compare this Nama Shokupan to a deluxe version with higher fat content and having a touch of honey aroma.

With my old mixer I did not want to offer this in my menu, due to the mixing requirements. But I think I can make more of this! The kiddos are ecstatic to know these Nama Shokupan are for them! 😆

I plan to make this again on Wednesday and make into sandwiches for offering to the monks on Thursday. ;)

Lazy Sunday morning brunch with the Chia Seeds Sourdough made into tuna melt sandwich.

The pineapple is so juicy and sweet! Thank you so much ka, N’ Khing.

And this new coffee beans from highcoffeeroaster is blowing our minds! Even as I grind it, the tempting aroma leaks out from my burr grinder and made Le Monsieur goes “wow!”. 🤩

When I made drip coffee with it, I could really get the full body fruitiness from it. After swallowing, it leaves a resonating aroma in my nose. Can you imagine it?

We made the second cup almost immediately after finishing the first. One cup is really not enough. 😋

You have to try this Karen light roast coffee beans from High Coffee if you love light roasts.

Do you believe love at first sight? 😌

This mixer is love at first sight for me. My good trustworthy Kenwood mixer is still working hard and going strong. But I worry all the time that it may protests and stop working out of the blue.

I can’t wait to mix dough in this new baby. Yaaaaaassss!

I have reduced the amount of fruits in chocolate chips in the twister hoping to get a fluffier texture. I think I quite like this version. Good balance of fruits and bread hehehehe

I like the texture and flavour of the twisters this time. The shaping and portion size are still work in progress.

I can surely grab one twister on the go and savour it in the car!
