📣No more industrial ham at Patachoo !

Indeed, as an artisan homemade is a natural way to work and provide as much as we can. From a long deep reflection, organising the process and health of our customers, we decided to ban the "Pinky" process meat within additives, especially "nitrites. 🙏

🐷So ham would not be the right name, because it design the pork thigh actually.
We are now using and soaking for 2 days pork shoulder in a "saumure", a mix of salt (from Samut Prakan), sugar and aromatic vegetables.

✨On the 3rd day, gently sim in a (homemade of course )vegetable stock and finish his cooking turned off stove until the cool of the liquid.

A night in the fridge after, slice it finally and you will see the difference 🤤
