คาเฟ่และร้านชา Monsoon Tea แห่งย่านอโศก จัดเวิร์กช็อปสำหรับคนรักเครื่องดื่มคอมบูชา หรืออยากลองหมักคอมบูชาดื่มเองที่บ้าน โดยคลาสนี้จะสอนตั้งแต่เทคนิคการต้ม การหมัก การรักษา และการผสมผลไม้ให้เป็นรสชาติต่างๆ ซึ่งคลาสนี้จะใช้เวลาทั้งหมด 2 ชั่วโมง มีการบรรยายทั้งภาษาไทยและอังกฤษ

แต่ความเชื่อนี้ก็ล้มไปเมื่อได้มาฟังชาว #Episteme (เอพิสตีม) เล่าเรื่องชาที่ Monsoon Tea Asok เวิร์กช็อป Tea Journey: More Than Just a Cup of Tea ที่ทำให้ได้รู้ว่า นอกจากชาเลี้ยง (แบบที่เราเห็นตามไร่ชา) ยังมีชาประเภทที่เรียกว่า “ชาป่า” ที่เติบโตอยู่ในธรรมชาติ และต้นชาสามารถโตได้สูงลิบลิ่ว มีอายุได้ถึง 400-500 ปีเลยทีเดียว
Episteme เล่าประวัติศาสตร์ชาโดยอิงข้อมูลจากหนังสือ The Tale of Tea: A Comprehensive History of Tea from Prehistoric Times to the Present Day ที่ตีพิมพ์ในปีค.ศ. 2019 โดยหนังสือเล่มนี้ชี้ว่าแท้จริงแล้ว ชาอาจจะไม่ได้มีต้นกำเนิดมาจากจีน แต่มาจากบริเวณที่เรียกว่า Eastern Himalayan Corridor ซึ่งครอบคลุมหลายประเทศ ตั้งแต่ทิเบต เนปาล ยูนนาน สิบสองปันนาไปจนถึงพม่า
สำหรับ Monsoon Tea นั้น เรียกตัวเองว่า “ชาที่เป็นมิตรกับป่า” (Forest-friendly tea) เพราะต้นชาเหล่านี้จะเติบโตเองตามป่าในภาคเหนือของไทย ซึ่งเป็นพื้นที่ไม่กี่แห่งในโลกที่มีชาป่าเติบโตได้โดยธรรมชาติ การดูแล เก็บเกี่ยว และทำธุรกิจจากชาป่านี้ จึงเป็นการอนุรักษ์ผืนป่าไปในตัว

บ่ายวันอาทิตย์ที่ผ่านมา เราเลือกคลายร้อนด้วยการนั่งจิบชา สนทนาเกร็ดประวัติศาสตร์และความเป็นมาของชาในถ้วย ที่เข้มข้นขึ้นจากการเรียงไล่ลำดับชาขึ้นไปตามปริมาณการบ่ม และกลมกล่อมติดลมอย่างการเติมชาที่ค่อย ๆ ผ่านการเปิดใบและชงเสิร์ฟไปกาแล้วกาเล่า
เวิร์กชอป More Than Just a Cup of Tea ของกลุ่ม Episteme ไม่เหมือนเวิร์กชอปชาอื่น ๆ ที่เราเคยไปมา ไม่ได้เน้นอธิบายความแตกต่างของชาขาว เขียว อู่หลง ดำ ให้ฟัง ไม่ได้ให้ชิมชาเพื่อเข้าใจรสชาติอย่างลึกซึ้ง และก็ไม่ได้ให้เราไปหยิบจับชามาเบลนด์รสชาติกัน แต่เป็นเหมือนวงสนทนาที่มีน้ำชาเป็นตัวขับเคลื่อน และมีทีมงานที่ศึกษาเรื่องนี้มาเล่าเกร็ดประวัติศาสตร์ของชา ตั้งแต่เริ่มมีการชงขึ้นในฝั่งตะวันออก จนลงเรือข้ามไปเป็นส่วนหนึ่งของวัฒนธรรมฝั่งตะวันตก
ความสนุกของเราอยู่ตรงที่เราได้มาตั้งคำถามกับสิ่งที่เราเห็น ชิม ดื่ม กันจนคุ้นเคย แต่ไม่เคยเอะใจว่า ทำไมตะวันตกนิยมชาเบลนด์ และพืชเขตทรอปิคอลอย่างชาไปปรากฏในชีวิตประจำวันของชาวอังกฤษได้อย่างไร ลากยาวไปจนถึงต้นกำเนิดของการดื่มชา ซึ่งนักประวัติศาสตร์พบว่าอาจไม่ได้เริ่มมาจากประเทศจีน เพราะพอสืบค้นไปถึงรากศัพท์ของคำว่าชา (ที่ตอนนี้มีคำว่า เต๊ หรือ ฉา) ในสมัยนั้นกลับไม่มีปรากฏ มีแต่คำว่า หมิง 茗 (ซึ่งปัจจุบันก็ยังใช้อยู่) และพบว่าเจ้า หมิง นี่ก็เป็นของที่นำเข้ามาจากที่อื่นอีกที สอดคล้องกับความเป็นจริงในทางภูมิศาสตร์ที่ว่าต้นชาขึ้นที่แถบ ๆ ทางใต้ของจีนและทางเหนือของพม่า ใช่! เขาว่าพม่านี่แหละ OG นึกภาพอาหารที่มีชาเป็นส่วนประกอบของพม่าก็ทำให้เราพยักหน้าตามไปได้
ทั้งหมดทั้งมวลนี้แกล้มด้วยชาจาก Monsoon Tea ซึ่งมีความน่าสนใจตรงที่เป็นชาจากป่า ในภาคเหนือของประเทศไทย ไม่ใช่ชาไร่แบบที่เราคุ้นเคยกันทั่วไป ทำให้มีกลิ่นรสอันเป็นเอกลักษณ์จากแหล่งปลูก ความกลมล่อมจากต้นชาที่อายุมากกว่าตามไร่ปกติ และไม่มีสารเคมี งานนี้ไปป์ หนึ่งในทีมงาน Episteme อาสาชงและพาเราชิมชาขาวรสละมุน ต่อด้วยชาเขียว ที่จับคู่กับขนมเปี๊ยะจากร้านเก่าแก่ย่านตลาดน้อยอย่างแต้เล่าจิ้นเส็ง ไล่ไปจนถึงอู่หลงกลมกล่อม และชาดำป่าที่รสชาติเด่นเป็นเอกลักษณ์ จนเป็นที่ชื่นชอบของหลายคนในโต๊ะ โดยที่สองอย่างหลังถูกจับคู่กับช็อกโกแล็ตไทยจาก KAD KOKOA แล้วยังมีเมี่ยงใบชา และคอมบูชาจาก Kombucha bar ของ Monsoon ตบท้ายด้วย
บรรยากาศรวม ๆ คือเป็นกลุ่มเพื่อนที่เราอยากนัดมานั่งจิบชาคุยสัพเพเหระเกี่ยวกับเรื่องอาหาร ซึ่งแต่ละคนสามารถแบ่งปันเกร็ดเล็กเกร็ดน้อยจากความรู้ในสายของตัวเองมาทำให้บทสนทนาสนุกและเพิ่มความเข้าใจอาหารในแง่มุมที่ลึกซึ้งขึ้น

About Monsoon Tea Asok
Just like the fact that Monsoon Tea is more than a tea company, Monsoon Tea Asok is more than a tea shop and a tea house. This cosy place tucked away in a quiet area of Sukhumvit 23, is the creative Forest Friendly Tea hub in Bangkok where cool events, collaborations and workshops surrounding “tea” are happening. And of course, we serve delicious tea and have our products available for purchase. Here at Monsoon Tea Asok, we want to share the serene mountain life of Northern Thailand with the big city by connecting tea farmers with tea lovers.
The essence of Monsoon Tea, indeed, lies in our forest-friendly tea: the quality, the uniqueness of its taste and the philosophy behind it. To further elevate one’s experience beyond just drinking tea, we create opportunities where everyone can experience tea in several engaging ways by organizing special events for everyone!
For example, we host tea tastings and tea talks, where everyone can taste 10 types of tea, ranging from white, green, black, oolong and flavoured tea. The participant will also learn more about the story of forest-friendly tea and our mission to conserve the forest in Northern Thailand. Other events such as a Kombucha themed week or tea and food pairing, tea and dessert pairing are also something that is not off the table! Monsoon Tea Asok is like a small social club for tea lovers!
