Wash the rice under cold running water until water runs clear. Leave soaked in cold water for 30 minutes. Boil the rice for 10 minutes, until cooked, drain and spread on a tray. Sprinkle with the Mirin and mix carefully. Take a sheet of Nori and place on top of a bamboo mat. Dab your hands with water and cover the Nori with the rice. Put a slice of cheese on top and decorate with the vegetables or seafood to your liking. Spread lightly with mayo and start rolling pressing firmly into a tight roll. Alternatively, start with the rice, cover with the Nori ans garnish as desired. Roll tightly and sprinkle lightly with the sesame seeds. Slice the sushi and serve with side of Wasabi, pickled ginger & soy sauce 😋😋😋😴


I come come here looking for Orange Tian. Like every month, I planned on doing the daring bakers challenge in time, but ended up postponing it to the last minute. So it's reveal date, and my orange tian is still a work-in-progress.
Which means it's time for another lazy dinner. Trust me, for all the hype, sushi is the easiest thing to put together. Buy some pre-toasted nori sheets. Cook sushi rice as per package directions. Spread the rice in a plate and for each cup of cooked rice, pour over a tbsp of rice vinegar, mixed with a tsp of sugar and a pinch of salt, then warmed to mix everything.
Spread this rice on the nori sheet, then heap your choice of fillings on one corner. I picked avocade and corn scampi , and spread them in layers over the rice (which is the picture you see above). Then I thought it will be too bland and poured half a tbsp of soy sauce over the veggies. Rolled it all up, the steam from the warm rice sealing the nori sheet, and then cut it into five pieces.
So next time you are off to eat that overpriced sushi, remember this takes less than half an hour from start to finish .

I'm not too sure just what got into me earlier this year but I asked for it.
That is, I asked if I could be one of the bloggers who had to come up with a new and exciting recipe using one of Healthy Solutions Spice Blends.
This has cost me several middle of the night conversations with my inner cook self.
I would wake up at 2 am with recipe ideas swirling and dipping through my subconscious.
You wouldn't believe the incredible ideas I can come up with , But I finally settled on one.
I settled on two recipes, I actually entered the other one in the contest, but the Scampi Sushi that I made, my friends also liked. So I thought I would share that recipe here as well
