To celebrate a HUGE moment for Filipinos with Forgotten Island Movie in the most Pinoy way possible: palaro with the cast, watched a performance from THE Lea Salonga!!! Dressed up in gorgeous modern Filipiniana!!! There was a JEEPNEY, budots, peach mango pies, sisig, titas, lolas, cousins, and approximately 500 selfies 😭😭😭

Just like party, you can feel so much care in the movie… that feeling of being understood, represented, and celebrated in all the little details 🥹 The movie is AMAZING and I’m so excited for you all to finally see it!!! Please go watch FORGOTTEN ISLAND, only in cinemas! 💜

Last weekend, I had the honor of collaborating with Chef .calo to host a special VIP dinner at , in celebration of the opening of Bongga Ka ’Day! The Musical on September 18. 🪩✨

The evening was a little trip back to Manila in the ’70s, celebrating the era through Filipino food, music, and a whole lot of nostalgia 🇵🇭

Huge thank you to Chef Miko and her team, the Newport kitchen chefs and kitchen staff who helped bring our ideas to life (and made them even better!). Maraming salamat. ❤️

And of course, thank you to the entire team for trusting us to be part of such a special evening.

Congratulations to everyone behind Bongga Ka ’Day! and happy opening night! 🌟🕺🪩

EASY CRISPY NO-OVEN SUSHI “BAKE” 🍣🤤

All the flavors of a classic sushi bake, but with an crispy twist and a creamy umami punch in every bite!

INGREDIENTS
Sushi Rice (credits to Just One Cook ❤️)

* 1 1/2 cups uncooked Japanese short-grain white rice
* 1 1/2 cups water
* 1/4 cup rice vinegar
* 2 tbsp sugar
* 3/4 tsp tablespoons salt

Topping

* 250 g salmon slab, thawed out
* Salt and pepper, for seasoning salmon
* 125 g kani sticks, shredded
* 225 ml Lady’s Choice Japanese Mayo
* 1/4 cup cream cheese, room temperature
* 2 tbsp green onions
* 1 tbsp sriracha
* 2 tsp sesame oil
* 1 tbsp white sesame seeds
* 1 tbsp black sesame seeds
* 1 1/2 tbsp teriyaki sauce (preferably unagi sauce)

Garnish

* 1 pc round ripe avocado (optional)
* 2 tbsp green onions
* Teriyaki sauce (preferably unagi sauce)
* Lady’s Choice Japanese Mayo
* 1/2 tbsp toasted white sesame seeds
* 1/2 tbsp black sesame seeds
* 5 packs seaweed crisps (plain or sesame flavor)

Procedure:

1. Cook the rice according to package instructions. In a small bowl, combine the rice vinegar, sugar, and salt. Pour the mixture over the warm cooked rice and gently mix until evenly seasoned. Avoid pushing the rice down. Set aside.
2. Season the salmon with salt and pepper and panfry the salmon until fully cooked. Set aside.
3. Cut the length of the kani sticks into 3, then shred by rolling in between your hands. Transfer to a large bowl.
4. In the same bowl, flake the cooked salmon with a fork. Add the room temperature cream cheese, teriyaki or unagi sauce, Lady’s Choice Japanese Mayo, green onions, hot sauce, sesame seeds, and sesame oil. Mix thoroughly until all the ingredients are well combined and creamy.
5. Using the same pan, add the seasoned rice and spread it evenly across the bottom of the pan. Top the rice with the salmon-kani mixture and spread it evenly over the rice. Cover the pan tightly with aluminum foil and place over medium heat for 8-10 minutes.
6. Remove the foil and drizzle the top with sriracha, teriyaki or unagi sauce, and Lady’s Choice Japanese Mayo. Garnish with green onions, white and black sesame seeds. Optionally, add sliced avocado on top.
7. Serve hot with crispy nori sheets. Scoop the crispy sushi bake onto a piece of crispy seaweed and enjoy!
