Chili Garlic Oil para sa Siomai*
*Sangkap:*
- *1 cup* garlic, pinong-pino tinadtad
- *1/2 cup* dried chili flakes o labuyo, tinadtad
- *1 1/2 cup* cooking oil, veg o canola
- *2 tbsp* oyster sauce, optional pero mas umami
- *1 tsp* as**al, pambalanse ng anghang
- *1 tsp* asin
- *1/2 tsp* ground pepper
*Paano gawin:*
1. *Painitin ang mantika* sa kawali, low heat lang. Wag pausukin.
2. *Ilagay ang bawang*, haluin ng 5-7 mins hanggang light golden. Wag sunugin kasi papait.
3. *Patayin ang apoy*, tapos lagay agad ang chili flakes. Yung init ng mantika na ang magluluto sa sili para hindi mag-amoy sunog.
4. *Timplahan* ng oyster sauce, as**al, asin, at paminta. Haluin.
5. *Palamigin* bago ilagay sa garapon. Mas sumasarap after 1 day kasi magbe-blend yung lasa.
*Tips para mas solid:*
- *Low heat lang lagi* sa bawang para crispy, hindi mapait.
- *Gamit ka ng dried chili flakes* instead na fresh para hindi magtubig at mas tumatagal. 1 month sa ref.
- *Dagdag 1 tsp s**a* kung gusto mo ng konting asim tulad ng sa Master Siomai.
