Maggie Allan.
Workplace Trainer Voyages Indigenous Tourism Australia in Yulara

Growing up in her family’s hospitality business, Maggie has always had hospitality in her blood. Since she was nine, she used to spend her spare time in the different departments trying to learn more while giving a helping hand.

With a love of travel and working with people, a career within the tourism and hospitality industry was a perfect fit.

Maggie was a student at Waikato Diocesan School for Girls and QRC had always been on her radar since attending Experience QRC.

With the assistance of our Internship Team, Maggie undertook her Industry Placement at the luxurious One&Only Hayman Island in the Whitsundays, Australia where she worked as a Food & Beverage Attendant.

We asked her about the biggest take away she got from her internship in Australia which was:

“The amount of effort that you put into it is what you will get out of it.”

After graduating from QRC, like many graduates, she returned to the place she undertook her internship, One&Only Hayman Island this time as a Butler. After a cyclone forced the closure of the island, she returned home to NZ for a break. Shortly after she was snapped up by Emirates One&Only Wolgan Valley as a Guest Services Agent, however, due to her training and customer centric philosophy, within 6 months she was promoted to a Team Leader position. After eighteen months she returned to NZ where she joined Treetops Lodge Rotorua & Kinloch Manor & Villas in Taupo as their Reservations Manager due to an earlier connection at Wolgan Valley.

Covid hit which gave her time to reflect and she soon realised how much she appreciated working in the Hospitality Industry.

Next another opportunity came up back in Australia. This time at Ayers Rock Resort, for Voyages Indigenous Tourism Australia where she is now a member of the Learning and Development Team, as the Workplace Trainer. The resort comprises of five hotels, one campground and nine food and beverage outlets.

Her role involves carrying out and overseeing workplace training throughout the resort. Not only in the hotels, but also in other departments including maintenance, tech services, freight services, activities, and the supermarket.

And what does she enjoy the most about her current role?

“The diversity, not only in the responsibilities of my role, but getting to work with people from all over the world. We strive to change lives through cultural tourism.”

We will finish off with her words of wisdom:

“Take every opportunity you can to get experience and build connections. The hospitality industry is incredibly small, and you will be surprised who knows who. Don’t sit around and wait for people to offer you opportunities, put yourself out there and show people that you want it. Work hard and good things will follow.”

We are excited to announce our next chef for this year’s event, Norka Mella Munoz, Head Chef of Kinloch Manor & Villas and an ambassador for both Ora King Salmon plus Beef and Lamb New Zealand.

Norka calls herself a ‘Chiwi’ and her cooking style reflects that, with a fusion of ‘kiwi’ local produce and her native Chilean flair. She grew up in Santiago with fond memories of her mum’s delicious cooking. She enrolled in chef school and studied for three years, while also working at various catering jobs and events in Santiago.

Norka then undertook a six-month apprenticeship in a five-star hotel working with several renowned chefs from France and Italy, followed by a move to Patagonia winning various gold culinary awards working for hotels such as the Intercontinental, Hotel Las Torres and the Explora Patagonia.

In 2003 she moved to New Zealand without being able to speak English but with the knowledge that food being a universal language would be enough to get herself a job. She started work with an Auckland catering company and soon became head chef. She moved on to tutoring new chefs at the Auckland Hotel and Chef Training School in Auckland and then moved to Hawkes Bay where she continued working as a tutor and then moved to luxury Hawkes Bay lodge Mangapapa.Recently this year, Norka has taken up a new challenge and moved her family to Kinloch on the shores of Lake Taupo where she heads up the kitchen team at the luxurious Kinloch Manor & Villas.

Norka says she has noticed a shift in feedback from guests wanting to try local produce, and to know exactly where their food has come from. This is where Kinloch Manors ‘Estate to Plate’ food philosophy comes into play. Guests are encouraged to try Kinloch’s own garden produce, being able to respectfully pick what they wish to taste.
