Rēwena Bread: Flour and yeast were introduced to the Maori and Pacific peoples by early European explorers, wheat flour being a staple on sea-going vessels. Combining flour and sugar with potatoes and letting it ferment, provided a sourdough starter for bread-making, and it was soon valued as a daily food. The word "Rēwena" literally refers to the ferment process. Sourdough potato bread has been made for hundreds of years in Europe. Italians call it Pane Garfargnino, named after the Tuscan town famous for the bread. Potatoes add extra nutrition, keep the bread softer, and preserves the freshness--besides the amazing flavour that is also added. In Germany it is called Kartoffelbrot, made with Russet Potatoes, and they claim it stays fresh for 5 days. It's true. Try some for yourself today at Volcano Vibe Collective in Raetihi. Back--by popular demand..Knäckebröd! These rye or wholemeal flatbreads are widely baked in the Nordic region. Their origins lie in Sweden and Finland where they have been baked in their current form for around 500 years. Swedish knäckebröd likely sits in most Swedish homes. It’s essentially a flatbread that has been baked to a crisp cracker. Not only known in Sweden, but also all through the Nordic world and beyond. Here in Sweden, it’s known as knäckebröd, hårt bröd, hårdbröd, spisbröd, knäcke. Our Danish neighbors call it knækbrød and in Norway, it’s called knekkebrød. The Finns call their’s näkkileipä and next door in Estonia näkileib. Up North, the Icelandics call it hrökkbrauð and on the Faroe Islands, it’s known as knekkbreyð. Least us not forget our Southern friends in Germany, where their version is known as ‘Knäckebrot’, ‘Knäcke’, or ‘Knackbrood’. Why the Dutch even have a variety called knäckebröd. Why the hole in the middle? Before the invention of the iron stove, baking these crisp flat breads was something people did in the rural communities, after the harvest and in spring. The hole in the middle was there to aid the drying-out, hanging and handling of the bread on long wooden poles above an open fire. I make mine with organic wholemeal Spelt, Rye and Oat Flours, adding Sesame Seed and Pumpkin Seed for extreme nuttiness and nutritiousness both! The sourdough starter adds a super flavour that can’t be duplicated by anything else, and the caraway seeds are a special touch. Such an ancient plant will inevitably gather legendary and magical powers. Caraway was thought of as a protective and binding herb, used against evil and witchcraft and as an ingredient in love potions, to bind the affections. The seeds were also added to chicken feed to prevent the fowls from wandering, and are still sometimes given to homing pigeons, to assure they find their way to their roost. Delicious topped with gravlax, smoked meat or prawns and a good hummus. Having suggested all those delicious toppings they’re simply lovely with a mature hard cheese too.
Abbey Bread--an old recipe from Belgium, a hearty sourdough traditionally made by Monks. Organic dark rye and heirloom purple wheat are the mainstays, with flax and malted barley grains for texture and nuttiness. From start to finish, making this bread is a 5-day process, in order to get that beautiful sourdough taste and long-keeping qualities. And now in a hefty one kilo size.
