Serves 4:
πŸ§… 1 brown onion
πŸ„ 150g mushrooms
🧈 2 Tbsp butter
🌿 2 tsp dried thyme
πŸ§‘β€πŸ³ 2 Tbsp plain flour
πŸ₯• 1c mixed frozen vegetables (peas, corn & carrots)
πŸ§„ 2 tsp crushed garlic
🍝 220g macaroni or pasta shells
πŸ«™ 500ml chicken stock
πŸ₯› 250ml standard milk (or use a dairy-free alternative)
πŸ‹ Squeeze fresh lemon juice
πŸ— 400g shredded roast chicken
Finely dice the onion and slice the mushrooms.
Heat a large pan with the butter over medium heat. Add the garlic, thyme, onion and mushroom and saute until aromatic. Season with salt and pepper.
Sprinkle the flour over the vegetables and stir to combine. Then slowly pour the chicken stock in while stirring to avoid lumps, followed by the milk.
Bring the mixture to a boil, then add the macaroni and frozen vegetables. Bring the mixture to a simmer, cover, and cook for 8-10 minutes or until the pasta is cooked. If the pasta is cooked and there is still a lot of liquid, simmer uncovered for a few minutes to let the sauce thicken.
Lastly, squeeze in the lemon juice and stir through the shredded chicken to heat.
Season with additional salt and pepper and garnish with chopped parsley.

😍 Here's a delicious Tuna Kimchi Fried Rice recipe 🍜 Make sure you save this for later!
Have you tried kimchi? 🍽️ This Korean dish has been gaining popularity worldwide and for a good reason! Kimchi is a spicy, tangy, and flavorful addition that packs a nutritional punch.
Not only is it low in calories and high in fibre, but kimchi is also loaded with essential vitamins and minerals like vitamins C, K, and B6. But the real star of the show is kimchi's fermentation process, which promotes gut health and aids in digestion.
In Korea, kimchi is a cultural staple and is often served alongside meals. At Anytime Fitness, we love incorporating diverse foods into our diet to get the full range of nutrients that our bodies need. Plus, trying new foods is always a fun adventure!

🍚 240g brown rice

πŸ«—4 tsp sesame oil

🐟380g tuna in spring water

πŸ™ 4x snack packs of roasted seaweed
1️⃣ Cook the rice as per packet instructions in advance or the day before.
2️⃣ Drain the tuna and finely chop the spring onion.
3️⃣ Heat a pan over medium heat with half the sesame oil, then add the kimchi and cook for 2 minutes.
4️⃣ Add the cooked rice, tuna, and remaining sesame oil. Cook for 2-3 minutes until combined and heated through. Stir through the spring onion.
5️⃣ While the rice mixture is cooking, fry the eggs in a separate pan.
6️⃣ Transfer the rice to a bowl. Top with the fried egg and sprinkle with sesame seeds.
7️⃣ Chop the seaweed using kitchen scissors and sprinkle it over the top to garnish. Alternatively, wrap small handfuls of the fried rice in the seaweed in your hand to eat.
