AMALA AND EFO RIRO – Western Nigerian Delight
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
INGREDIENTS:
For Amala:
2 cups Amala flour (yam flour)
3 cups water
A pinch of salt
FOR EFO RIRO:
2 cups spinach (or any leafy green)
1 onion (chopped)
2 tomatoes (blended)
1/2 cup red bell pepper (blended)
1/4 cup palm oil
1 tsp ground crayfish (optional)
1 tsp ground pepper (optional)
1 seasoning cube
Salt to taste
1/2 cup cooked beef or fish (optional)
HOW TO PREPARE:
1. Make the Amala:
Boil 3 cups of water in a pot. Add the Amala flour, stir continuously until it thickens into a stretchy dough. Lower the heat and continue stirring until smooth. Set aside.
2. Prepare the Efo Riro:
Heat palm oil in a pot. Add chopped onions and sauté for a few minutes. Add the blended tomatoes, red bell pepper, and ground crayfish (if using). Stir and cook for 10 minutes.
3. Add the spinach:
Add the spinach or leafy greens to the pot. Season with a seasoning cube, ground pepper, and salt. Cook for 5–7 minutes, then add cooked beef or fish if desired.
4. Serve:
Scoop some Amala onto a plate and top with the delicious Efo Riro. Serve hot!

FRIED RICE – WESTERN NIGERIAN STYLE
Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes
INGREDIENTS:
2 cups long grain parboiled rice
1 cup diced carrots
1/2 cup green peas
1/2 cup sweet corn
1/2 cup chopped green beans
1/2 cup cooked diced liver or chicken (optional)
1 small onion (chopped)
2 tbsp vegetable oil
1 tsp curry powder
1/2 tsp thyme
1 seasoning cube
Salt to taste
Water or chicken stock (as needed)
HOW TO PREPARE:
1. Parboil the rice: Rinse and boil the rice till almost done (not too soft). Drain and set aside.
2. Stir-fry veggies: Heat oil in a pot, add onions, then stir in carrots, green peas, sweet corn, and green beans. Cook for 3–5 mins.
3. Add seasonings: Sprinkle curry, thyme, seasoning cube, and salt. Add cooked liver or chicken if using.
4. Combine with rice: Add the parboiled rice into the pot, mix well, and pour a little stock or water. Cover and steam on low heat for 5–10 mins.
5. Serve hot: Enjoy with fried plantain, salad, or grilled chicken!

WESTERN NIGERIA JOLLOF RICE RECIPE
Prep Time: 15 minutes
Cook Time: 35-40 minutes
Total Time: 50-55 minutes
Ingredients:
2 cups long-grain parboiled rice
4 large tomatoes (blended)
1 onion (chopped)
1 bell pepper (blended)
1/4 cup vegetable oil
2 tablespoons tomato paste
2 teaspoons curry powder
1 teaspoon thyme
1 teaspoon ginger (optional)
2 cups chicken or vegetable broth
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup frozen peas (optional)
1/2 cup diced carrots (optional)
Protein of choice (chicken, beef, or fish)
Instructions:
1. Prep the rice: Wash the rice thoroughly in cold water and set aside.
2. Make the base: Heat vegetable oil in a large pot. Add chopped onions and sauté until soft. Add the blended tomatoes, bell pepper, and tomato paste. Stir well and cook for 10 minutes until the mixture thickens.
3. Add spices: Stir in curry powder, thyme, ginger, salt, and black pepper. Let it cook for 3 more minutes.
4. Cook the rice: Add the washed rice and stir to coat it in the tomato mixture. Pour in the chicken broth, cover, and cook on low heat for 20-25 minutes. Stir occasionally to avoid burning.
5. Add veggies and protein: Add peas, carrots, and your choice of protein. Stir and cook for another 5 minutes.
6. Serve: Once the rice is tender and fully cooked, serve hot!
