Bobotie is South Africa's national dish, a mildly curried minced meat baked with a savory egg/ custard topping.
• Ingredients:
• ground beef or lamb
• onions, finely chopped
• white bread, crusts removed
• milk (for soaking and custard)
• vegetable oil
• curry powder
• turmeric
• fruit chutney (e.g., apricot or mango)
• brown vinegar
• sultanas (optional)
• eggs
• Bay leaves (optional)
• Instructions:
• Preheat your oven to 180°C (350°F).
•
• Soak the bread in milk, then squeeze out the excess milk, reserving the liquid.
•
• In a pan, brown the onions and garlic in oil, then add the minced meat and spices (curry powder, turmeric, salt, pepper). Cook until the meat is browned.
• Stir in the mashed bread, chutney, vinegar, and sultanas. Remove from heat and mix in one beaten egg.
• Spoon the mixture into a greased baking dish.
• Whisk the remaining two eggs with the reserved milk and pour over the meat mixture. Top with bay leaves.
• Bake for about 35 minutes, or until the custard is set and golden brown. Serve with yellow rice.
