Masa (Waina) Recipe
Ingredients
4 cups rice (Tuwo Shinkafa rice)
½ cup cooked rice (same Tuwo Shinkafa rice)
1 medium onion
½ cup yoghurt, liquid milk, or powdered milk (use any one of the three for a richer taste)
1½ tablespoons yeast
½ cup sugar (adjust to your taste)
¼ teaspoon salt (or just a pinch)
Method
1. Soak the rice overnight and wash thoroughly to remove dirt and stones.
Add the onion and half of the cooked rice to the soaked rice.
Blend into a smooth paste.
Strain the mixture using a sieve or filter.
Add the yeast (make sure it is active) and half of the sugar.
Cover and leave in a warm place or under the sun for about 1 hour, or until it doubles in size.
Once risen, add the remaining cooked rice, the remaining sugar, milk or yoghurt (if using), and salt.
Mix well until everything is properly combined.
Fry in a masa pan until golden and cooked through.
Note:
The batter should not be too thick and should not be too watery.
Sugar can be increased, reduced, or omitted completely, depending on your preference.
Masa with little or no sugar pairs perfectly with soup.
